Biko | Philippine Rice Cake

Biko is a rice cake that is very popular here in the Philippines, prepared using Malagkit (glutinous rice), coconut milk, and brown sugar. I grew up eating this sweet dessert as it is one of the staple dish that is served on occasions like birthdays, Christmas, and during Easter. I've always loved Biko but only found out recently how to make one. The process is simple but tedious. Anyone can learn how to do this but I'm not sure if everyone would be willing.

Like many other dishes, there are many ways on how to prepare Biko but this is how my mom does it:

1. Boil coconut milk in a wide pan over medium heat. Stir for 20 minutes or until you see the latik.

2. Remove the Latik from the pan and set aside. In the Philippines, the word Latik may refer to either the caramel-like syrup or coconut curds. I'm referring to the latter as you can see on the picture below.

3. After getting the coconut curds out, add Muscovado sugar to the oil from the coconut milk. Muscovado is an unrefined sugar that contain molasses and has strong flavor. When the Muscovado sugar melts into the oil, the caramelized liquid form of Latik is created and the cooked Malagkit rice can be added to the mix.

4. This is when the hard work comes in. You need to mix the Malagkit rice and Latik syrup thoroughly to make the consistency even. It's not very easy to do since the rice is heavy and sticky.

5. Once you've achieved the right consistency and you see that the application of the Latik on the Malagkit rice is even, you can take your Biko out of the pan and let it cool on a container you prefer. You can then garnish it with the coconut curds that were set aside.

This was the first time I witnessed how the Biko is prepared. It involves a lot of hard work and commitment from the one preparing it. I remember how Red always say that the most important ingredient of any dish is the effort you put into. I find that to be true and I guess it's the reason why Biko is so delicious.
