Okra curry in tomato gravy
Okra is the most favourite vegetable of children, particularly in my family. They used to take it in their lunch box. Generally, okta is prepared in dry form but in this recipe, it is made in tomato gravy.
Ingredients
- Okra 1/2 kg
- Tomatoes 1/4 kg
- Onion 1 big sized
- Garlic 8-10 buds and green chili 2-3 nos
- Turmeric powder 1/2 tsp and coriander powder 1 tsp and red chili powder 1/2 tsp
- Cumin seeds and mustard seeds 1/2 tsp each
- Asafoetida a pinch
- Vegetable oil preferably mustard oil 1 tsp
- Salt to taste
- lemon juice 1-2 tbsp
- Green coriander leaves for garnishing
procedure
- Wash okra, tomatoes and green chili thoroughly.
- Slit okra in and cut into 2-3 parts.
- Make a paste of tomatoes, onion, garlic and green chili. Add all spices powder and salt in it.
- Heat oil in a pan and crackle cumin and mustard seeds, then add asafoetida.
- Add tomato paste in it and saute for few minutes then add okra and mix well. Cover the lid and cook for 20 minutes on low to medium flame.
- Once it is cooked remove the lid and again cook for few minutes.
- Add lemon juice and garnished with chopped coriander leaves.
Serve hot with chapati, poori, parantha or choice of your bread.
