Joy of Baking : Tutti-Frutti Banana Vegan Cake
Sometimes we don't know what to cook in the kitchen even after entering the kitchen and all of sudden we decide to make something. It is really a fun and joy to bake sometimes so today Sunday morning I decided to bake a simple cake with available ingredients in the kitchen as there was rain outside so it I was not in the mood to go outside and buy something extra for the cake.
Today I baked a simple Whole Wheat Flour Tutti-Frutti and Banana Vanilla Cake.
As I was in relax mood so decided not to follow any prescribed recipe for cake so used ingredients according to my previous experience of baking-
- Whole wheat flour 1 and 1/2 cup
- Ripe banana 2 nos
- Powdered sugar 3/4 cup
- Vegetable oil 1/4 cup
- Tutti-Frutti 1/4 cup
- Chocolate chips 2 tbsp
- Lemon juice or vinegar 1 tbsp
- Water/plant-based milk about 1 cup or as required to adjust the consistency of the mixture
- Salt 1/4 tsp
- Baking powder 1/2 tsp
- Baking soda 1/2 tsp
- Dry fruits of your choice for garnishing
How did I prepare-
- Mixed all dry ingredients except baking powder, baking soda and tutti-frutti and passed the mixture through a sieve to make a uniform mixture.
- Took banana and vegetable oil in a bowl and meshed with beater. then added other liquid ingredients like water, vanilla essence/extract and lemon juice and mixed well with beater for few minutes.
- Added dry mixture to liquid mixture slowly with continuous stirring using a beater. The more you beat more fluffy your cake will be.
- Added tutti-frutti at this stage.
- Preheat the oven to 180-degree Celsius and coated the baking tray with oil.
Just before transfer into the baking tray baking soda and baking powder added in the batter and mixed gently. - Baked in the oven for 15 minutes at 180 degrees and then for 5 more minutes at 150 degrees.
- Cooled at room temperature and de-moulded. Garnish with choice of toppings.
The cake was so soft and delicious
