Today's recipe: Freezer Breakfast Burritos!

Today's breakfast recipe is a very wonderful one and on popular demand.

It's the Freezer Breakfast Burritos.

I love this particular meal because it is filled with so many delicious ingredients such as eggs, sausages refried beans, cheese and tater tots. It can also be prepared in more ways than one!

Recipe 1
Prep time : 1 hour
This recipe can produce 8 servings.

INGREDIENTS
2 cups of frozen tater tots
8 flour tortillas
1 cup shredded cheddar cheese
2 tablespoons olive oil
8 links breakfast sausage
8 large eggs
1/3 cup half and half
(Half and half is equal parts of whole milk and cream. For 1 cup half and half, you can substitute 3/4 cup whole milk + 1/4 cup heavy cream or 2/3 cup skim or low-fat milk + 1/3 cup heavy cream)

kosher salt, to taste
ground black pepper, to taste
1 can refried beans (about 16 ounces)
1 cup shredded Monterey Jack cheese
2 tomatoes, diced
1/4 cup chopped fresh cilantro leaves

Preparation:

  1. Preheat oven to 400 degrees F.
  2. Lightly oil a baking sheet.
  3. Cook the tater tots according to the instructions on the pack
  4. Heat olive oil in a large pan over medium heat.
  5. Add the sausage and cook till it becomes brown, crushing it as it cooks. Set aside in a bowl
  6. In the same pan, add a tablespoon of oil to heat.
  7. Add the eggs to the pan and cook keep whisking until it gets done.
  8. Gently stir in the half and half.
  9. season with salt and pepper
  10. Continue cooking until it is thickened. Remove from heat.

The assembling

  1. Sprinkle the beans first on the tortillas,
  2. top it with tater tots, sausage, eggs, cheeses, tomatoes and cilantro.
  3. Fold in opposite sides of each tortilla, then roll up, burrito-style. 14. Place, into a prepared baking sheet, with the seam facing down.
  4. Place into an oven and bake for about 12 - 15 minutes.
    Serve hot!

Recipe 2

INGREDIENTS
2 medium potatoes, peeled and diced.
12 eggs
1/4 cup of whole milk
1 large red bell pepper, diced
1 small red onion, diced
12 (10-12inch) flour tortillas
1 tablespoon vegetable oil
1 teaspoon kosher salt
2 tablespoons unsalted butter
1 1/2 cups shredded Monterey Jack cheese

Preparation

  1. Heat the oven to 400°F. Prepare a baking sheet by sprinkling oil or non stick spray.

  2. Combine the potatoes, peppers, and onions together in a bowl. Sprinkle oil and 1/2 teaspoon of the salt, and stir to mix properly.

  3. Transfer to a baking sheet and roast for about 20 minutes.

  4. While the vegetables are in the oven, lightly beat the eggs, milk, and remaining 1/2 teaspoon salt together.

  5. Melt the butter in a skillet or non stick pan.

  6. Add the eggs and cook, until nearly done but still moist.
    Remove from the heat and leave to cool off for a while.

The assembling

  1. Tear off 12 squares of aluminum foil. Place a tortilla on top of the foil.
  2. Place 2 tablespoons of cheese onto the tortilla.
  3. Add the cheese and 1/4 cup roasted vegetables
  4. Add 2 tablespoons of the scrambled eggs, and any extra toppings of your choice.

  1. Roll the burrito properly by folding the sides to cover the filling, then roll from the bottom to the up.

Wrap the burritos tightly in the aluminum foil. Place them in a baking sheet and freeze for future use. You can also put well frozen burritos into a Ziploc bag and store for up to a month. You can reheat in a microwave for 4-6 minutes before serving.

Tips to note

  1. The eggs and vegetables should be room temperature before assembling the burrito.

  2. You also want to make sure to use room temperature ingredients to avoid any sogginess.

  3. Freeze the burritos in a single layer on a baking sheet — this will help it to freeze faster.
