TODAY'S BREAKFAST RECIPE : PLANTAIN FRITTATA

Happy Easter to everyone!
Today's breakfast recipe is a delicious one from Africa. It's called Plantain Frittata.
It's basically fried plantain and baked egg. If you are not from Africa, you can substitute plantain for Irish potatoes.
Preparation time: 10 mins
Cooking Time: 40 mins
INGREDIENTS
vegetable oil (for frying)
6 large eggs
1/2 medium onion
1 teaspoon garlic
½ red, green and yellow bell peppers( these will be cut into thin strips after the stem and seeds have been removed)
1 small tomatoes
1 scotch bonnet pepper
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon curry
2-3 ripe plantains
salt and ground pepper
1 cup of chopped sausage
PREPARATION
- Preheat oven to 350 degrees F.
- Grease a sizeable baking pan with butter or non-stick spray and set aside.
- Remove plantain peel by slitting down the peel and pulling it back.
- Slice the plantains in round shapes
- Fry the plantain using the vegetable oil, till it becomes golden brown. Then set aside.
- Heat up a medium sauce pan and drizzle with 1 tablespoon of vegetable oil.
- Add in the onions and garlic,
- Add the tomatoes, after about 2 minutes, you add the chopped sausage.
- Add the green, red and yellow pepper strips.
- cook for about 4-5 minutes.
- Using a large bowl, whisk eggs and the vegetable mixture together.
- Add salt and pepper to your taste.
- Transfer the mixture into pan greased baking pan.
- Arrange the fried plantains beautifully in the pan with the egg-veggie mixture.
- Bake for about 30-40 minutes; until it comes out firm at the center.
You can also use a fry pan and stove, if you don't want to bake. All it takes is;
- Grease a fry pan with butter, oil or non stick spray.
- Pour in the egg-veggie mixture into the fry pan
- Arrange the fried plantain beautifully in the mixture
- Place in the stove with low heat for 20 minutes. The low heat helps the frittata get done without burning.
- Cover the fry pan with a lid. The lid allows it firm up.
- When you confirm that it is very firm, you can remove the lid and allow it cool off for a while.

if in my area this dish is cooked cooked sate, which is taken from the meat of fresh goat, in addition to soy sauce
