Not your usual breakfast!

It is unarguable that breakfast is the most important meal of the day. It is the meal that powers you up and get you ready for what ever the day has instore for you.
But most of us choose to skip this meal because we don’t have enough time in the morning.

Whether you had to get your kids ready, pack their lunches or you chose to stay in bed a little longer for that extra snooze because you were out late with your friends last night.

Whatever the case may be. Breakfast usually gets no attention. Most of us just grab a cup of coffee and maybe a muffin or a bagel.

Breakfast that is high in carbohydrates and sugar and low in fiber will spike up your blood sugar level and quickly drop. Which can lead to mid morning cravings.

Good breakfast should contain #food that is high in protein, fiber and good fat also quick and easy to eat is a plus. If you could have it on the go, that’s even better.

I recently had to be on a restricted diet. My breakfast is usually very heavy. I’m talking a meal like rice and some meat and vegetables dishes. I have to be off rice and some other carbohydrates for a month. And I was lost! I didn’t know what to eat in the morning. I couldn’t just have fruits and yogurt. That’s like a snack to me. I wouldn’t last the whole morning!!

That‘s what brings me to write this post. This easy breakfast #recipe (I shouldn’t call it a recipe as it is not. It’s more of an idea or a guildline) that’s I’m going to show you will change your morning forever.

It is a good healthy breakfast. You can just pop it in the microwave for 30 seconds.

However You are still required to make these breakfast in advanced Maybe on your weekend. You can keep them in the fridge or freeze them if you like. Then just heat them up in the morning.

I’m talking about breakfast in the tin! This is not a new idea nor am I claiming this is my idea.

However it is an idea to help you with breakfast in the morning. It is also a good portion control, if you are on a diet or if you had gastric bypass.

By all means these is not restricted to just breakfast. You can make it for lunch or dinner. Like I said it is such a good portion control.

So let me show you how I made these breakfast muffins. You will need muffin tin, eggs, cheese and whatever veggies you have in your fridge. This is a good way to clean up your fridge as well.

You can make these #vegan easily. Just use tofu instead of eggs. And cut out the cheese.

The ingredients that I will be using for this post is just what I have on hand, you can definitely use anything you like. There are no rules. Let your creativity run wild!!

Eggs and seasoning. Putting seasoning into the eggs mixture ensure that each muffins is evenly seasoned. One large egg should filled one muffin hole.

Following are 3 different combinations from those ingredients.

Add the ingredients into the tin. Be sure to grease the tin before you add any ingredients in.

Add the egg mixtures.

Add the cheese.

Bake at 350°f for 20mins or until you insert the toothpick and come out clean.

Once they are cooled, You can put them in a container and store them in the fridge or freezer.

This will make your morning routine a whole lot easier.
