Roast pork with spinach-apple sauce

Ingredients:
- Pork, 400 gr.
- Green Apple, 1 PC.
- Butter, 20 gr.
- Apple juice, 200 ml
- Spinach, 120 gr.
- Sour cream, 20%, 100 gr.
- Coriander (ground), 0.5 tsp .
- Mustard (grainy or Dijon), 15 gr.
- Sage
- Thyme
- Black pepper, salt, olive oil
Thyme leaves are separated from the stems (leave a little to serve). Garlic press with a knife and clean.
Pork cut across the fibers into steaks 2-2.5 cm thick, salt, pepper, sprinkle with thyme and sprinkle the olive oil.
Apple cut into slices, remove the core.
In a frying pan, heat the butter and fry the sage leaves for 30 seconds.
Remove the sage and fry the Apple with coriander until crust (3-4 minutes).
Spread the Apple in a separate bowl, add a little olive oil, garlic to the pan and fry the meat on high heat for 2 minutes on each side.
Throw away the garlic, reduce the heat to medium, cook the meat for five minutes, turning periodically, then add the mustard, Apple juice and simmer for another ten minutes.
Add sour cream, stir and warm for half a minute.
The meat is removed from the pan, and in its place add spinach, salt to taste and simmer for two minutes.
Serve pork with fried apples and spinach sauce.
