Chahan

Chahan is a distant Japanese relative of pilaf, rice for which is first boiled and then fried with various fillers. Today we will cook Chahan with egg and vegetables, but you can put chicken, pork, shrimp, etc.

Ingredients:
- Rice, 250 gr.
- Eggs, 3 PCs.
- Onion, 1 PC.
- Bell pepper, 1 PC.
- Turmeric, 0.5 tsp.
- Sesame seeds, 1 tsp.
- Sesame oil, 15 ml
- Soy sauce, 20 ml
- Garlic, 3 cloves
- Vegetable oil
- Salt
Wash the rice in cold water, pour water in a ratio of 1:2, bring to a boil, reduce the heat to a minimum and cook under the lid for 13 minutes, then turn off the heat and keep under the lid for 10 minutes.
While the rice is cooking, chop the vegetables. Pepper and onion cube, garlic chop smaller.
When the rice is ready, heat 8 tablespoons of vegetable oil in a frying pan, break the eggs and fry on high heat for about half a minute, stirring constantly to get the pieces of omelet.
Add the onion, half the garlic, pepper and fry for a 1.5 minute on high heat.
Add the rice, the remaining garlic, fry, stirring, on high heat for two minutes, put the turmeric, soy sauce, sesame oil, add salt to taste, stir and fry for a minute.
Serve with sesame seeds, garnish with some greens (cilantro, for example).
