Healthy Treats | When Company Calls….It’s Pineapple Whip!

Aloha my Tropical fruit friends! Warm weather is here again!


We’ve had quite a few visitors lately, most from the cold northern states. They all say the same thing when they arrive. It always takes a few days for the shoulders to relax. (You know how your shoulders tense when you’re freezing?) I have to say that is not something I miss! We had a couple of weeks of cool weather but now we’re back to hot, hot, hot!


Guests were here...

and I needed a quick dessert. Of course I wanted something light and healthy. Luckily I had just purchased a fresh pineapple…Perfect!

Did you know the Pineapple is a perennial which grows to be 3’- 4’ tall. In the wild they are pollinated by hummingbirds. Wow! Most people believe the pineapple originated in Hawaii. Not so…actually botanists believe the area around Argentina, Paraguay and Brazil was the native birthplace for the beloved Pineapple. Hawaii does produce quite a few Pineapples but actually only about 13% of all pineapples sold are grown in Hawaii! Pineapples don’t transport well so most of the pineapples grown on the island of Hawaii is kept on the island. Most Pineapples are grown Costa Rica, Brazil, and the Philippines. Full of Vitamin C and packed with flavor we use this sweet fruit in juices, smoothies, salads, entrees and of course desserts

Let’s whip up a fresh pineapple Dessert! You’ll need only 4 ingredients!

How does Pineapple Whip sound?

From the fridge…

  • Fresh Frozen Pineapple Chunks
  • Frozen Banana
  • Canned Full Fat Coconut Milk (refrigerated overnight)
  • Maple Syrup

Grab your favorite food processor…


Throw in the chunked pineapple, chopped banana, 3 tablespoons of the solidified coconut cream and 3 tablespoons of the coconut water. Start pulsing! What a noise this makes, you’ll have to stop periodically to scrape the sides. Add a bit more coconut water if it’s too thick.

Taste…


It and see if it’s sweet enough! If not add a tablespoon of Maple syrup! Pulse until it’s really creamy.

Now into the Freezer…


For about 3 hours. I like to chop up a few pieces of fresh pineapple for a little garnish.

Another delicious but healthy dessert! Pineapples grow quite well here in KZN, especially up Zululand way. We've started planting a couple of pineapple tops and have 3 plants growing, not sure when it will start bearing.

I've never tasted a pineapple before but the way you use it to create some fresh treats is really fantastic and looks delicious! <3

Yes, please! I think pineapple is my favorite variety of nice cream. My boyfriend has tried planting the tops up here before, but it is just a bit too cold in the winter time. I have been seriously craving fruit lately, so this is especially tempting to me right now! I've been so good about trying to buy local, seasonal produce for the bulk of my shopping that I may just have to treat myself with a few types of tropical fruit soon to get me through until spring berries hit!

Ugggg… I can almost taste the sweetness of this pineapple cream. I can’t look at this for too long for it may compromise all of my work. Haha… it’s a tough day for a chef when you make me salivate through a computer screen.…

Oh wow... summer is just around the corner (well, around a corner then a long road and then another corner...)... but this looks great! I'm definitely trying it out! I had no idea you could make a dessert like this with such simplicity!
