Peanut Butter and Jelly…a childhood favorite!


I don’t know about you, but Peanut Butter and Jelly sandwiches were a childhood staple in my house. In lunches, after school snacks. Yep, remember that squishy white bread? Oh, and yes, my favorite…grilled peanut butter and jelly, YUM!


Did you know the Earl of Sandwich invented the “sandwich” by requesting a meal he could eat with one hand during a 24 hour gambling session! Although we don’t know who invented the Peanut Butter and Jelly sandwich itself but it was first featured in 1901 by being shared in a Boston Cooking School Culinary Magazine. Peanut Butter and Jelly sandwiches have been a tried and true favorite with strong opinions regarding which jelly or jam to use as well as crust on or off the bread. Grape jelly seems to be the favorite with strawberry a close second. All agree however, cutting the sandwich is a must, either diagonally or horizontally!

I would love to share a new, healthy snack or dessert version showcasing “peanut butter and jelly!” One, I think you will enjoy!

Not-Your-Mama’s PB&J


Ingredients I used!

  • 1 ½ cup Mission figs
  • 1/2 cup Walnuts
  • 2 tablespoons Flax Seed
  • 2 cups Natural Peanut Butter
  • 1/3 cup Coconut Oil
  • 2 tablespoons Maple Syrup
  • Cacao Nibs

The base for our PB&J is made from dried figs, walnuts and flax seeds. Figs are a wonderful fruit, full of vitamins, fiber, protein and potassium. They’re high in antioxidants which will help with inflammation. They also promote brain health. Walnuts contain the highest amount of antioxidants found in all nuts. They’re also high in Omega 3 which may reduce heart disease risk. Flax Seeds also contain high levels of Omega 3, fiber and nutrients. This, my friends will be our “jelly”. Low in sugar, no additives or preservatives! A pretty healthy idea, right?

Place all of these ingredients in your favorite food processor. Process until well combined and then press this mixture into a parchment lined baking dish.

We can’t forget the Peanut Butter can we? Peanut butter, Oil, and Maple Syrup are added to the food processor and blended until light and creamy. If you don't want any additional syrup, leave out the Maple Syrup! The amount we added gave just a slight taste of sweet.

Pour this over your “jelly” layer, sprinkle cacao nibs on top and freeze for one hour.

Now, kick your feet up, take a bite, close your eyes and Enjoy!

I think your kiddos both large and small will love this healthy take on a famous taste of PB&J. Mr. Bird couldn't was beside himself. All I could hear from him was "oh my, oh my!"


Keep them in the fridge for up to two weeks or if you’re like me and can’t control yourself….put them in the freezer! I hope you’ll try them and let me know what you think! I would love to hear.

I know @lizelle...I laughed to tears from that one! So funny...I'm glad you liked this one. My daughters will be visiting so I need to stock up on the goodies over the next week or so. We would have so much fun creating these goodies together right? :)

FOR TSE: These do look absolutely delicious. I'm probably the only person on the planet who has never had a PB&J. It just doesn't sound appealing to me. But for some reason this does. And it's healthy as all get out.

The Weasel ate all the figs we have lately, so I'm going to have to make him get more. (Not a problem. The man loves to shop worse than any woman you ever saw in your life!!)

I'll probably chop up some chocolate chips though instead of carob. I'm sorry ... carob just is not chocolate.

Oh good, I hope you will try them! They are indeed healthy...better get the Weasel out to the store...he'll be glad he did! The chocolate does round them out nicely. Let me know what you think when you make them! :)

Oh my oh my. I think maybe I could live without this variant on pb&j but I'm sure I don't want to. I don't know where to get cacao nibs but I'm sure they aren't essential. Everything else I can get an hour's drive from here. Then hand it all off to @enchantedspirit and wait for deliciousness incarnate.

Trust me, I'm a doctor.
