Ice Cream! Make it yourself!
We all love it,nothing better on a hot summer day. Unfortunately it is one of those desserts we shouldn’t eat every day. High fat content and usually high sugar content as well. And it can be expensive! One 1/2 gallon of ice cream can cost over $5.
Guess what, you can make it at home for just pennies!
And you can make healthy ice cream!
Our daughter and her husband @mountainjewel have been here this week and today we hiked through the Fakahatchee Strand Preserve State Park in the Everglades. We had a great hike with lots of wildlife and beautiful flora and fauna.
Today was a warm day and when we got home I thought ...
We needed ice cream!
But what kind? Hmmm.... I had some thoughts...
Before I tell you what we're making, let me share a little bit about one of the main ingredients!
The Avocado!
Yes, really! The Superfruit!
• The Avocado is an amazing fruit! Yes fruit, because it has a seed in the middle covered by skin on the outside.
• The Avocado is often called the alligator pear because of it’s black bumpy skin and pear shape.
• One Avocado can be as small as 8 ounces or as large as 3 pounds.
• One Avocado contains more potassium than a banana.
• Avocados are loaded with lutein which with eye health, lowering the risk of macular degeneration.

And they taste wonderful, so creamy! Great in salads, with eggs, and of course guacamole, the list is endless.
Today we are going to make Chocolate Mint Ice Cream!
So come with me fellow Steemians! Let’s follow the Ice Cream Train!
You will need:
• 3 frozen bananas
• 3 Tablespoons almond milk
• 1 ripe avocado
• 1 Tablespoon honey/agave/maple syrup (optional)
• ½ Teaspoon mint or mint leaves
• ¼ cup chocolate chips (I use dairy free/gluten free)

Well, that sounds yummy. I usually make my ice cream very basic with just fresh fruit ie blending frozen bananas in my Vita Mix....and I have "ice cream". I like the healthy ingredients you use.
I have to admit though, I usually buy an old avacado. I choose it at the store properly but within a day or two it's nasty inside. They are not cheap up here either. Haas is the kind I like. I've tried little ones, big ones but I don't seem to have success. A few times I have gotten a really good one and enjoy that on my toast with tomato...but lately they are not so nice.
Is there a time of year that's best for avacado?
I'll definitely try this one and sneak in the avacado so John won't know. I think the mint is amazing.
It doesn't seem like avocados are seasonal any more. I bought them year round in the midwest and now here in Florida they're everywhere. I'm sorry you aren't able to find nice ones. In the past I would buy unripened avocados and then just let them ripen for a few days. I think you will find when added to smoothies or ice cream the avocado really makes everything very creamy, no worries for John, he won't be able to taste them! lol
Oooh, nothing like a little nice cream after getting outside on a warm day! I need to remember to do this for my niece this summer. She loves getting outside!
