Hello my friends! Glad to see Season 2 of the Cook With Us Challenge is here!


I was so excited to see the lineup for this season. I can’t imagine what amazing creations we will see from all of the talented people within the Steemit Community.


I first want to send a special thank you to @offfoodandart, @chefsteve and @padamama for hosting the CookWithUsChallenge! This is a wonderful opportunity for sharing and learning about foods all over the world.


Our CookWithUs challenge for this week....Holidays Foods!


I have to say desserts immediately popped into my mind when I read the challenge. I love desserts and the opportunity to make any dessert for those I love during the holidays is welcomed by me. There are so many it was difficult to choose which I would prepare.


In the United States we just celebrated the 4th of July, Independence Day. A time spent with friends and family alike. As we have celebrated this holiday over the years, strawberries and blueberries were a favorite at many 4th of July celebrations. Cakes, pies, fruit bowls, ice cream and tarts, berries were always present._

Red, White and Blue sets the backdrop for a perfect celebratory dessert! Don't you agree?


And by the way, did you know July is National Blueberry month?


The Blueberry is actually native to the United States! Just another reason to celebrate berries! Native Americans called them the Star Berry. They believed the Great Spirit sent Blueberries marked with a star on the bottom of the berry so we would not forget where this great fruit came from


Well, the party may over but fruits and berries are still in season! I thought I would share a bit of my Independence Day Berry love with you!

Coconut Berry Tarts!

For the Crust

  • 1 ½ cup pitted Medjool dates
  • 1 cup unsweetened organic shredded coconut
  • 1/8 teaspoon Sea Salt
  • 1 cup Raw Almonds (soaked overnight and drained)
  • 4 tablespoons organic cocoa

Coconut Cream

  • 5 tablespoons Coconut Butter
  • 1/2 cup Almond Milk
  • 1/3 cup Organic Maple Syrup
  • 1 teaspoon Vanilla
  • 1/4 teaspoon Sea Salt

Topping

  • Fresh Strawberries (sliced)
  • Fresh Blueberries

Serves 6

Let’s Prepare!

  • Place all crust ingredients in your food processor. Process until finely ground.

  • Press crust firmly into tart pans and set aside.

  • Place all coconut Cream ingredients in your blender. Blend until creamy! Pour into tarts, cover and place in freezer for a couple of hours. You may just refrigerate if you wish. I find they're best when chilled.

  • Remove from refrigerator/ freezer and add toppings!

Enjoy! A Great dessert for any holiday!

This is a truly enjoyable dessert. I love all the layers. The bottom crust with the dates, coconut, cocoa and almonds sounds delicious and makes a great base layer. I'm guessing it has some sort of a nice, chewy texture to it. The flavors and texture of the coconut cream adds another element of enjoyment. The colorful berries give the dessert a refreshing feel.

I also like that it's quick and simple to prepare. I'd love to try making this sometime soon.

Thank you so much for such kind words. You are exactly right, quick and simple to prepare..one of those dessert which aren't complicated. The base layer was indeed chewy which I liked and the coconut was very creamy. I have childhood memories of coconut pie, a favorite so I wanted to share. I hope you'll try it and let me know your thoughts, revisions...:)
