Spicy lentil soup puree: Recipe

Here is a delicious red lentil soup recipe, which is based on the best lentil soup I’ve ever tasted, which I discovered at a town restaurant. Seasoned with herbs and spices, the soup you will like to have for it's appetizing quality.

Ingredients

• 300 g of red lentils;
• 1½ liters of water;
• 1 tablespoon of olive oil;
• 1 medium bulb;
• 4 cloves of garlic;
• 2 medium ripe tomatoes;
• 1 vegetable broth cube;
• 1½ teaspoons ground cumin;
• ½ teaspoon turmeric;
• ¼ teaspoon ground nutmeg;
• salt - to taste;
• 1 bay leaf;
• 1 lemon;
• a few twigs of parsley.

Preparation

Rinse the lentils, pour 500 ml of water and leave for 30 minutes. Heat the oil over medium heat in a saucepan or sauté pan and fry the chopped onions for a few minutes.

Add chopped garlic, finely chopped tomatoes, lentils (drain excess water from it), remaining water, bouillon cube, spices and bay leaf. Bring to a boil. Then reduce the heat, cover and cook for 15-20 minutes, until the lentil is softened.

Remove the bay leaf and blend the soup with a blender. Add the juice of the whole lemon. Decorate the finished soup with chopped parsley.
