Pork Humba | Filipino Dish | I said I don't cook 😂
Like I said before, I don't cook. I'm not a kitchen person. Cooking is like torment to me. Hahaha!
But today I wanna share with you my cooking experience with what we call here in the Philippines - Humba. Please excuse my cooking for this is my first time. It just came up my mind to make this dish for our congregation get together. Thanks to google again for the recipe.
What is Humba by the way? Well, according to google, Humba is a sweet pork dish that resembles the famous Filipino dish Pork Adobo in terms of appearance. Pork belly, pork hocks, and pork ham are the 3 most common pig parts used to make this delightful masterpiece. I chose the pata or the front leg of a pig to make this dish because I don't like its fatty part. Hehe
This dish uses all the ingredients of pork adobo; however, certain ingredients such as salted black beans and banana blossoms are added to give the dish a twist. Some also use pineapple juice which gives a distinct taste to the dish.
How did I do it? I prepared everything that is needed.
2 lbs pork
1 T cooking oil
1 large diced onion
5 cloves minced garlic
2 T soy sauce
2 pcs dried bay leaves
1 t whole pepper corn
1 C sweetened pineapple juice
2 T vinegar
2 T salted black beans
2 T brown sugar
1/2 C dried banana blossom
Now, let's start cooking.
I sautéed the onion and garlic in a large cooking pot and added the pork. Waited for the pork to turn brownish but not burnt.
I'm actually scared I'll burn it so I took it out earlier. Hehe. I'm cooking 3 kilos of pork so I did the browning in batches. Just set aside the pork.
After browning all the pork, I returned it to the pan and added the soy sauce, bay leaves and peppercorn. The soy sauce adds a darker color to the meat.
Then, I poured in the sweetened pineapple juice. Let it boil and simmer until it's tender. Please take note that simmering plays a key role in cooking this dish. You can also add some juice if it's not yet tender.
When it was tender, I added the vinegar and simmer for about 3 minutes. Then the brown sugar and salted black beans - these adds color to the dish as well - and again simmered it for 5 minutes. Lastly, I put-in the dried banana blossom and simmer for 8 minutes. Remember to simmer after putting the ingredients by batch. Trust me, don't pour them all in at the same time. Hehe.
