[Yummy and Easy Recipe] Luffa Acutangula & Baby Corn Soup (Indonesian Traditional Soup)
The time before sunset is the perfect time to enjoy a bowl of warm vegetable soup.
Indonesian people generally do not apply the pattern appetizer-main course-dessert. Indonesian people are accustomed to eating only one type of food at a time, for example, only eating rice with various side dishes at one time, and another time to enjoy light dishes such as soup and dessert.
So, today my attention is drawn to the supply of my vegetables that are low. I only have a Luffa Acutangula, and some baby corns.
So I decided to make soup with these two vegetables. In Indonesia, soup with a non-thick sauce, called "SAYUR BENING".
In Indonesia, Luffa Acutangula is called "GAMBAS". It is very similar to the cactus.
To make Gambas Soup and baby corn, I only add chicken broth and shallots to add a fragrant aroma. The most important thing about this dish is that the broth is fresh when enjoyed, and does not feel heavy in the esophagus.
FIRST STEP
Peel the Luffa acutangula and cut it into pieces. The thing you need to remember is to be careful to choose the Luffa acutangula, don't let you use the old Luffa acutangula because the taste will be bitter.
Also cut baby corn and shallots. You can also add pieces of celery leaves. and chili peppers.
SECOND STEP
Heat the oil, then fry the onion first until the onion is fragrant. Then add water.
THIRD STEP
After the water has boiled, add pieces of Luffa acutangula and baby corn. Don't forget to add chicken broth or beef broth to your taste, and salt.
FOURTH STEP
Cook until cooked, the cut of the Luffa will appear to shrink, but don't get too soft.
Serve Luffa acutangula and Baby Corn Soup while warm.
The Others Side of Luffa Acutangula
Luffa acutangula also has health benefits. On the simple benefit, Luffa acutangula soup can help speed healing when you catch a cold.
At the advanced level, Luffa acutangula (especially on the seeds) is used to make extracts as herbal medicines to treat diabetes.
In Chinese society, Luffa acutangula is known to cure jaundice.

I've never tried luffa, but have seen it at the markets - might have to give this a try.

mmm so tasty looking! i love asian soups, especially egg drop soup and miso soup. I like how the broths are so clear and simple compared to our heavy soups.
Miso soup is my fav too. Heavy soup and feel warm in the body after enjoying it.
