Bicol Express Recipe " Sinilihan "(Bicol words) is originally from Bicol tradition style but has been popularized in Malate Manila Restaurant Philippines. It was discovered and first cooked in the early 60's and originally made by one of the owners of a restaurant in Manila, a woman named Cely Kalaw. She was born in Laguna but spent her childhood in Bicol Region.It has been said that people were in demand for spicy foods in a restaurant like Ginataang Taro. She discovered and tried to cook this recipe.She gots the named of this recipe from the train routed vice - versa from Bicol to Manila, the train named Bicol Express. It was not been confirmed and clarified that is really from Bicol Region because it was discovered in Malate Manila.But the style was originally from Bicol Region like Ginataang Taro leaves, which is made up of coconut milk and chilies. As we all know Bicol region are fond of eating Ginataan and Spicy foods dishes. Bicol express same as ginataang taro leaves is made up of pork (any part) but mostly belly, coconut milk, chilies and salted fry shrimp paste (sibling) the only different is the leaves of taro was been added as ingredients.


Yesterday night, I made this Bicol express recipe. I went to Smart Ways Hypermarket located at Alsalam Street Abu Dhabi UAE. I bought 1-kilo of pork back skin instead of pork belly. It's affordable and cost 12 AED per kg. I bought some ingredients like chilies, coconut milk, and salted fry shrimp paste.

Here are the ingredients I used to prepare this Bicol Express Recipe.

  • 1-kilo Pork back skin
  • 2 cups dissolve in water powder coconut milk
  • 15 pcs green chili
  • 1 medium-size clove garlic
  • 1 medium onion
  • 2 spoons salted fry shrimp paste ( Sibling)
  • 1 teaspoon black pepper
  • 1/8 teaspoon seasoning

Chopped ingredients garlic, onion, chili, coconut milk and salted fry shrimps paste.

Cleaned pork back skin ready for a boil.

Steps to prepare Bicol Express Recipe:

  • Wash and clean the pork back skin.
  • Boiled for 10 to 15 minutes.
  • Take from pots and slice into a small cube.
  • Prepare the frying pan.
  • Put little cooking oil.
  • Saute the garlic, onion, chili until it turns to brown.
  • Add 2 spoon salted shrimp paste ( replacement for salt).
  • Add the sliced pork back skin stir and let it for 5 minutes.
  • Add the coconut milk.
  • Add 1 teaspoon black pepper
  • Let and wait until the broth exhaust, stir and let it for 10 minutes.
  • Add Chili on the top and serve.

Sauteed engridients and pork back skin.

Coconut milk had been added and let it boiled until the broth exhaust estimated time is 10 minutes.
