A yummy, healthy, kid-friendly snack or dessert the whole family will love. Banana sushi is a fun-to-make treat. Don't forget to involve your little ones during the process. They will love it and it will help them to develop a love for cooking at a young age.

If you have never tried to make your own peanut butter than now may be the time. It is so much better and no yucky preservatives or other chemicals. Just peanut and a little coconut oil and lots of blending. Yes, it is as simple as that.

Though a friend of ours just came back from Belgium with some dark, yummy Belgian chocolate, if you want to keep things 100% plant-based, coconut oil and raw cacao will do the trick. Next to an occasional organic egg from the chickens in the garden and some Cambodian wild jungle honey, dark Belgium chocolate are the only occasional exceptions I make on my vegan diet.

READY? Let's start with making the peanut butter first. No fan of peanuts, use almonds or other nuts instead.

BTW I served mine with a sweet Cambodian Banana dessert wine.

DIY PEANUT BUTTER (makes about 1 to 1.5 cups)


2 cups peanuts, roasted
A drizzle of extra virgin coconut oil

FYI: this recipe will make more peanut butter than you need, but your blender will have a hard time blending the peanuts to butter if you use less than one cup. We love peanut butter dressing and it's yum in smoothies too so I made a lot.

  1. Preheat oven to 200C or 400F.
  2. Add peanut to a baking sheet and roast for 10 minutes. Though this step is totally optional, it heat will help release the oil from the peanuts to form the butter and it also gives the peanut butter an extra roasted flavor.
    using a high-speed blender or powerful food processor, blend the nuts until paste-like consistency. Depending on the blender you use you might want to pause the process to cool down the blender and scrape down the sides.
  3. Add a little coconut oil for extra smooth and creaminess and blend again.

CHOCOLATE SAUCE


Belgium dark chocolate, 86 percent cacao

FYI: as you may or may not now I'm a 99% plant-based muncher. As a Belgian, I make an exception for Belgian chocolate. Though I didn't check I'm sure this is not 100 percent vegan. If you are vegan opt for vegan chocolate or mix coconut oil and cacao powder in equal parts instead. Add some maple syrup to sweeten if you like.

  1. Melt chocolate in a double boiler system.

BANANA SUHI


6 small bananas (or more if you have more people over for dessert)

Toppings:


Chia seeds
Crushed pistachios
Dried goji berries
Desiccated coconut
Coconut flakes
Hemp hearts
Sliced almonds

  1. Peel banana and then spread nut butter or chocolate sauce on top.
  2. Sprinkle with superfood combinations of your choice and press them lightly into the nut butter or chocolate sauce to ensure they will stick.
  3. Place in the freezer for 20-30 minutes or until chocolate has hardened.
  4. Using a sharp knife, evenly slice banana into โ€œsushiโ€ pieces.
  5. Enjoy straight away with a glass of banana wine or transfer onto a baking sheet and freeze for later.
