Kiwi Chia Seed Pudding with Fresh Berries and Coconut Flakes

Who's up for a dessert or afternoon snack? I sure am! Especially when there's chia seeds, kiwi, and fresh berries involved. And what's even better, unlike most sugar-laden desserts, chia pudding will give you tons of energy. This lovely treat is packed with fiber, omega-3, antioxidants, and even some protein. Ohh btw, this recipe makes a great power breakfast too.
And another bonus, it's super easy to make. Mix, wait, top! That's all it takes.
Ingredients (serves 2-3)
- 3 tbsp chia seeds
- 1 cup unsweetened almond milk
- 1 tbsp maple syrup (or honey)
- ½ -1 tsp pure vanilla extract (optional), or to taste
- 2 kiwi fruits
- 2 tbsp coconut flakes
- Fresh berries to top

Instructions
- In a blender or food processor combine the chia seeds, almond milk, kiwi, vanilla extract (if using) and the honey or maple syrup. Blend until well combined.
- Pour into small bowls or jars with lid or cover with plastic foil. Refrigerate for about 4-5 hours or until pudding has formed. If the pudding is still too runny for you, add a little bit more chia seeds, mix and refrigerate for 30 minutes to1 hour more.
- When the chia pudding is ready to be served, top with fresh berries and coconut flakes.
