Good morning steemit! How are you all today! We took my mom and dad to an island yesterday and my little furry friend Chivas is getting better every day. Though I would like to see her eat a little more she is active and today we can stop the post-operative cortisone medication which should improve the taste of her food again.

Later this week we can remove the stitches and then with a little more love and support we'll hope she'll be her old self again! Thanks again for all the support messages we received the past 2 weeks. It not easy when somebody of your family is struggling and in pain... even if that somebody has furr.

Ready for today's energy and antioxidant booster? It was a good one. Believe me ;)

ALL HAIL TO PINEAPPLE AND KALE


Fresh kale is low in saturated fat and cholesterol. It is a good source of dietary fiber, protein, thiamin, riboflavin, iron, folate, magnesium and phosphorus, vitamin A, vitamin C, vitamin K, vitamin B6, calcium, potassium, copper, and manganese.

While the pineapple will provide your body of more vitamin C and manganese, it is also a very good source of copper and a good source of vitamin B1, vitamin B6, dietary fiber, folate, pantothenic acid, and bromelain - an enzyme known to fight allergies, a cough, cancer, arthritis, among many other health issues.

INGREDIENTS (serves 2 for breakfast)


2 cups fresh kale
2 cups coconut water
3 cups pineapple
1/2 avocado
ยผ cup fresh mint leaves (or more to taste)
Juice of 1 lime
2 tbsps extra virgin coconut oil
Optional toppings: coconut flakes and goji berries

DIRECTIONS


  1. Blend kale, mint, and coconut water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more water and blend again. If you have a high-speed blender you can throw in everything at once.
  2. Optional: Top with coconut flakes and goji berries or other superfoods/toppings you like.

Nice smoothie ingredients. What else do you typically eat in a day along with your smoothies?

Salad or soup for lunch and a plant-based cooked meal for dinner. What are your favorite meals?

I don't have a strict diet but I feel like I should. I work full time and still take care of my 3 kids meals ages 23, 20 and 17. I wish I could focus more attention on what I eat so that I felt better. One of these days I will try to be really healthy with my meals. I try to have at least one smoothie a day.

One bite at a time. that's how we started out too! No stress and just keep adding healthy things to your diet and eventually all the good stuff will crowd out the bad stuff ;)
