Bring the colors of summer to your plate. I know, for most of you it is still a long way to go until summer. Well, where we live it's always kinda summer, although we have entered the winter period too. While temperatures of 20-25C (68-77F) may sound like summer to you... in the tropics that's definitely pants and sweater weather!
But hey nothing to complain here! Although I would like to have some snow.... but that's probably not gonna happen!
Ingredients
For the dressing
2 tbsp extra-virgin olive oil
1 tbsp apple cider vinegar
1 tbsp mustard
2 tsp sesame seeds we used black sesame seeds
1/2 tsp garlic powder
sea salt to taste
black pepper to taste
For the salad
4 cups salad greens of your choice
1 avocado chopped
2 oranges peeled and cut into slices
1/2 cup bell pepper (capsicum, any color) chopped
2 tbsp dried goji berries (optional)
Directions
To make the dressing, combine ingredients in a small bowl and whisk until well combined.
Combine salad ingredients in a bowl. Toss to combine and drizzle with mustard dressing.
Enjoy ;-)
