Georgian Beef Walnut Soup Recipe

Kharcho is a traditional Georgian soup originating in Mingrelia containing beef, rice and chopped walnuts. The soup is usually served with finely chopped fresh coriander. The characteristic ingredients of the soup are meat, cherry plum purée made from tklapi/tkemali, rice, chopped walnut and the spice mix that varies between different regions of Georgia. Kharcho can be made using beef, lamb, pork, chicken or goose,

Ingredients 

600 gr of beef 

2 onions

4 tomatoes

6 tbsp of white rice

100 gr of walnuts

3 bay leafs

3 garlic cloves

1 can f chopped tomatoes 

Fresh greens , basil, parsley and dill 

Oil

Salt & Pepper

Ground chilly pepper

Lemon juice

Directions

Step 1 : Cut your beef fillet into small bite size pieces. Add to a large pot with 2 lt of water. Slowly cook it for 1,5 hours. Occasionally skim the water. 

Step 2 : Crush your walnuts with a rolling pin or in a food processor and set aside. Wash your rice in cold water few times, to get rid of the starch and set aside. 

Step 3 : In a skillet, add oil and chopped onions and fry them for 5 minutes until onions are golden brown. Then add all your spices and crushed walnuts, and mix it all together. 

Step 4 : Add chopped tomatoes, mix well and cook for 5 min.

Step 5 : Add bay leaves, peppercorn into your beef stock, then white rice and all the onion walnut mixture. Mix everything together and cook soup until it reaches boiling point.

Step 6 : Then squeeze fresh lemon juice, add squeezed garlic and all your greens. Leave the soup to cook on low heat for 10 more minutes. Enjoy!

I'm going to have to make all these amazing foods I'm finding on steemit. Do you have a recommendation on the cut of meat to use here? Sounds like a tough shank or shin would give it some nice thickness as the collagen broken down.

you totally should :) I would use the softest piece of beef! Because you will be cooking it for a while, you want it to fall apart in your mouth :)
