Hi Steemians! Today I’m going to show you how to prepare a vegetable soup. My mother Mariska was born on 2 August, 1939 (you may also want to read a poem I wrote today in her honor). She taught me this recipe and now I will be sharing it with you.
It’s kind of cold this winter in Buenos Aires (if you live in the northern hemisphere you are enjoying summer right now), so I am preparing enough soup for a whole week.
You will need:
|1 Celery||1 Bouquet of Parsley|
|1 Big Onion||½ Bell Pepper (green)|
|2 Corn||2 Carrots|
|¼ Cabutia Pumpkin (Calabaza Cabutia)||2 Vegetable Bouillon Cubes|
|1 Teaspoon ground red pepper||2 Garlic cloves|
|Olive Oil||Boiled Water|
Cut all the vegetables in small cubes (Brunoise type cut). Put some olive oil in a large saucepan and sauté the onions first, the bell pepper, garlic, celery and parsley. Then add the carrots, cabutia pumpkin and corn. Parboil it for 5 minutes.
