Veggie Spaghetti Bolonese.

In the UK it seems we make spaghetti bolognese all wrong, not mixing the spaghetti in with the sauce being the biggest thing but we also use pork mince rather than beef mince. So wanting to keep this tradition of making it wrong but wanting to mix in the spaghetti I decided to do a vegitarian version using just a handful of ingredients.
Here's what I used.
A splash of cooking oil
Mushrooms cut into quarters.
Yellow pepper.
1 clove of garlic (I would use more but the wife isn't keen on garlic.)
1 box of tomato passata.
Dried mix herbs.
spaghetti.

To start I put on a pan of spaghetti and in a larger pan I poured in some oil and then chucked in some quartered mushrooms, a chopped yellow pepper and the crushed garlic clove. Heating the pan I stirred the contents till they cooked and went soft.

The passata is then added to the pan along with the dried mixed herbs and everything is stirred in.

The pan is left to simmer until the spaghetti is ready to be added.

I then added the spaghetti to the pan and a little of the water from the spaghetti pan. Everything is stirred and the pan is left to simmer for a few more minutes.

Served onto plates you can then season to taste and add some grated hard cheese and it's ready to eat.
Quick, easy and the speghetti tastes far better for being mixed into the sauce.

Thanks, it was. I'm trying to cut meat out of 1 meal a week so as a starting meal it worked.

Easy and delicious! In the fall/winter I mix a small amount of sauce into the spaghetti and then serve with more sauce and some grated parmesan cheese on top for each person's 'taste'. But in the spring and summer, I make a fresh chopped tomato/veggie mixture and only top the pasta with it - although I do mix the spaghetti with a bit of melted butter, salt and pepper first; it's so much lighter tasting for the warmer months. Love reading about your food adventures!

I only post the food adventures that work, although the disasters may make for funny reading.

Even though you used another ingredients, it looks delicious, I love spaghetti by the way
