Free recipe "BIKO-licious" - for EVERYJUAN

Here is a free recipe of BIKO for all of those who love kakanin.

A BIKO FOR EVERYJUAN

BIKO- a Filipino dessert made with glutinous rice cooked in coconut milk and sugar and topped with coconut milk curds.

There are lot of ways to cook BIKO but this recipe is our best and specialty.

Prepare all the ingredients :

  • 1 kg of glutinous rice
  • 3 plastics of coconut milk (coconut milk squeezed, bought from the market)
  • 1/2 panutsa
  • 1 cup of warm water
  • 3/4 of brown sugar (Segunda)

1.Cook first your glutinous rice in your caldero or rice cooker.

2.In a pan/ kawali, POUR coconut milk and bring to a BOIL. Continue to cook, stirring occasionally, until liquid starts toTHICKen. As oil starts to SEPARATE and latik begin to form, regularly stir it. Continue to cook and stir until latik turn golden brown. Drain latik from the oil.

3.Set aside the latik, we will use this for our toppings. (The coconut oil will be left in you pan.)

4.In a bowl, mix the sugar and a warm water. Stir it until thickened forming a syrup.

5.Pour your syrup to the coconut oil, stir it until boils.

6.Continually stir until thickened.

7.Add the 1/2 panutsa ( cut it into small pieces so it can melt easily.)

ADD PANUTSASTIR UNTIL MELTALL PCS WERE MELTED

8.When all the panutsa were melted, add the cooked glutinous rice gradually and stir.

9.Stir it continuously until the mixture is very thick.

ADD & STIRADD & STIRADD & STIRADD & STIR

10.Transfer it to bilao and put latik for toppings.

TRANSFERAND SERVE
