You just described adaptation not evolution. In order for it to be Evolution the species has to change from one kind to another so like from fish to feline or from mammal to reptile.

You can do all the linguistic gymnastics that you want, the fact of the matter is evolution is the changing of one kind of species into another and the example that you gave of the Guppies is not that. The guppy is still a guppy therefore is not an example of evolution.
