FOOD FIGHT FRIDAY||CHICKEN FAJITAS

Friday is here again and it is time for the food fight to begin.  I enjoyed last weeks contest as much as I enjoyed eating the food.  These competitions have me in the kitchen a lot more than usual.  But I love trying out some of the recipes that are posted.  Thank you @foodfightfriday for the opportunity to compete with such great chefs.

I really didn't know what I was going to prepare for @foodfightfriday. I started taking inventory of food items in my refrigerator and freezer. The day before I made my husband some vegan enchiladas. I made the filling from some riced cauliflower, broccoli, and carrots. I sauteed my usual onions, bell peppers, and garlic in olive oil. Then I added the vegetables to the onions and peppers and seasoned the mixture with cumin, taco seasoning, and cayenne pepper. Next I added a can of black beans to give it more substance. What I ended up with was beans and rice.

So I decided to go with a Mexican theme. I founded a package of boneless skinless chicken thighs in the freezer and I had a container of bell peppers and onions. These ingredients screamed Fajitas, so Fajitas it was.

I cleaned, washed, and cut chicken into strips. I made a batch of Fajita seasoning from spices already in my cabinet.

Next I added olive oil and seasoned the chicken with the Fajita seasoning.

The cast iron skillet was already heating up on the stove top. I added the seasoned chicken to the hot skillet and let it sizzle until it was brown on one side.

The bell peppers and onions were added next. I had to cook the chicken and peppers and onions in two batches. I didn't want to crowed the skillet and inhibit the browning process.

That was it, I had the makings for Fajitas. I grabbed the tortillas and cilantro from the refrigerator, heated up the rice and beans and I had a beautiful Mexican dinner.

I love fajitas any day of the week. Black beans were also my go to bean for meals. They are so yum and filling. I’d actually probably kill for one of those fajitas in a corn tortilla right now. I haven’t had a tortilla or anything like it for 6 months. I guess it forces me to get creative with my recipes though. These look delicious. The only addition I’d make would be some fresh spicy guac on top. Of course, because I’m literally addicted to guac. Happy food fight @paleotwist. I’ll be back at the 15 minute mark to upvote 😉

Thank you @puravidaville, I had an avocado in the frig but I thought about it too late. That would have set it off.

Do you know how to keep a half of an avocado green while refrigerating it? I just discovered this a few weeks ago… so many lost avocados for nothing 🤦🏼‍♀️

If you chop up some onion, put that along with the half avo in a Tupperware container and back in the fridge, it’ll keep an avocado green for a full and full night min. I don’t know if you already knew that but it was a life changer for me. Haha

This looks like it turned out really good, @paleotwist. I'd eat them. In a heartbeat. :) I like the idea of using the cast iron skillet, too.

Thank you @glenalbrethsen, I find it is easier to quick brown in cast iron skillet vs the non stick skillets. I love cooking in my cast iron pans.

A cast iron skillet, how old is yours? Aomenof the best food ever is the food that got cooked in a 20 year old skillet. And, by the way, this is my favorite cover image of yours yet! That’s a really nice picture—glamour shot.

Thank you @dandays. My skillet is about 11 years old. My sister got my mother's old old cast iron skillet Thank you for the picture comment, I have being working on my staging and working more with Lightroom and Photoshop. I would love to take a Food Photgrapphy class.

Again you have me drooling over here and you keep flashing that golden fork. HaHaHa That is it!!! We are having Fajitas tomorrow...or maybe I will make some kabobs of some sort... AAHHHH Food Fight Friday Madness is kicking in!!
