Alls I know is that I wanted to make Eggs Benedict, so I watched some YT videos, most important imo was my boy Gordon Ramsay’s. So that’s where this recipe came from.

I used the traditional English muffin and I also used an everything bagel as well seeing as I had some left in the fridge.

I sourced my ham, I didn’t have Parma Ham like Gordon, but I got mine from an old local butcher shop call Hackenmuellers. It was a smoked ham and boy howdy was it good just on its own.

I decided if I was gonna do the damn thing, I needed to get some proper eggs. None of those factory farm watery eggs. So these were free range organic brown eggs, you could tell by the yolks that these were top shelf eggs. Beautiful golden yolks. After separating the whites, the yolks were placed in a double boiler, or in this case, a glass bowl on top of my rice cooker. Fancy, right?

The Hollandaise was by far the trickiest part of the whole recipe. In fact, my first attempt resulted in some really gross looking scrambled eggs. This resulted from not whisking constantly and probably too much heat. But my second attempt was everything I was looking for and more.

Poaching the eggs was easy as 1-2-3 for me, as I have even made a post here about how to poach the perfect eggs. As Gordon says, “they look like little lumps of mozzarella”.

Mise en place, I’ve come to find out is a French term for “everything in place”.

English muffin/bagel, pan fried smoked ham, poached egg, top with homemade hollandaise.

i have been looking for a great eggs benny for a while now. To be fair i am far from the west but I still cant' seem to get it done for me. I think the only solution is eventually going to be learning how to do it myself.

The major problem is the fact that no one seems to be able to do what you find as coming naturally...: Poaching eggs.

because for seriously you guys: if you aren't capable of that part of the process, the rest is really for naught. I have been to places that had amazing hollandaise sauce but the poached egges were basically boiled and well, that in my mind is unforgivable.

I'm gonna come to your house and have brunch one day.... looks like you got it nailed down.

That's rough man. Poaching the egg I think gets over complicated. I learned how I usually do, watching YT videos, kinda like how I learned to make this hollandaise. I hope you can find a place that does a poached egg properly. Or, you could always swing on by for brunch anytime, my door is always open.

If we can assign a particular taste to a particular emotion, then hollandaise goes with happiness. Now that you've got this in my head, I know what I'm having for breakfast.

I can concur with that @ginnyannette! I was a happy man when I dolloped that hollandaise in one motion over those poached eggs. Looked just like when Gordon did it in the vid I watched. Send me some pics if you end up having eggs benny too!

OH MAN!! I love me some Eggs Benny.. hot dang!! Dude the best I have ever had was here at a local breakfast/brunch joint called The Maple Counter. It was called the Northwestern Egg Benedict. Instead of ham... Salmon... I nice chunk under the egg and some small flakes of salmon sprinkled over the top... :drool:drool…..
Speaking of eggs, isn't it crazy how different the color of the yokes are? Wait until you see Duck egg yokes.. The yoke alone is the size of the whole chicken egg, and the color is almost orange. They are super rich with flavor!

Dude, Salmon, I love Salmon. You just gave me my next #fff contender. I am drooling right now. I think you'll like it :) I will try Salmon on my next eggs benny too, because that does sound pretty good.
Funny you should mention duck eggs. I actually have had them before. The wife and I were heading to a winery tour out of town an hour or so. We passed a family farm selling eggs and such. We got a dozen of each, chicken and duck. You aren't kidding about the yolks! You can taste the creaminess just by looking at them. Much more orange and lush for sure, you got that right. I love duck eggs, but they are much harder to find.

I have ducks here at the house. 4 layers so we get a good amount of duck eggs around here. We tend to mix them 50/50 with chicken eggs when making scrambled eggs for the kids.

It’s so hard these days to bite my tongue when people are biting things like cheese and eggs but I’m doing it, see? This is me biting my tongue. 😉

Hey man, one of the first things I mentioned to Pura when we first got to the UK *(we’re in Greece now, be back in UK in a couple months probably) and continued mentioning as we’d do our grocery shopping was Thomas English Muffins. One would think those things would be all over the UK, I mean, the dang box even says “English” on it—negative!

Must be some marketing ploy which is practically impossible, simple unfathomable, no way that goes on back home—naaaaaaa.

The English Bagel mystery in the UK is probably similar to Fosters beer being basically non-existent in Australia. Where here in the States, the commercial goes "FOSTERS! Australian for beer!" Every Strayan' I've spoken to says that it's garbage and just a marketing ploy to non-Strayan's.

Or not. But yeah, it is, lol.
