Aweee, I love squash done that way. Butternut , acorn, spaghetti squash, all good. Sometimes with the spaghetti squash, I will gut the roasted squash, add some other sautéed veggies, maybe some sausage, or browned turkey chop meat mix it altogether and re-stuff the shell, top with a little cheese and bake for another few minutes. It becomes a whole meal in one nice little package. De-lish.
My mom, I hate to say it, wasn't much of a cook. Still isn't. She has a few staples she can fall back on, like her chili or chicken stir-fry, or in this case, her squash. But I love the simpleness of it, and it is so tasty! I'll have to try that spaghetti recipe of yours, sounds amazing! Thanks for the tip, @farm-mom!
