Hello My Dearest Foodies,

This is the first time I saw this pasta in our supermarket, so I had to buy it. I mean I probably have seen it before, but not from spelt. The Wikipedia also informs that traditionally PAPPARDELLE PASTA contains dried egg however, this one does not. It is made only of spelt flour. You may see for yourself HERE.

It was absolutely delicious and I recommend you to try it, however, you can have any other pasta with this simple, yet mouthwatering sauce. There is no better tomato sauce than freshly made from scratch.

PAPPARDELLE MARINARA
Spelt Pappardelle Pasta with Marinara Sauce & Pine Nuts
Vegan – Gluten Free Optional

INGREDIENTS for 4
• Spelt Pappardelle pasta (or pasta of your choice follow the cooking instructions on the package)
• Fully ripe tomatoes on vine 8 ( diced)
• Onion 1 medium size (diced)
• Garlic 6 cloves diced
• Oil ¼ cup
• Apple Cider Vinegar to taste
• Himalayan Pink Salt to taste
• Cayenne pepper to taste
• Fresh Basil ¼ cup (only the leaves, diced)
• Pine nuts ½ cup
• Arugula 1 cup

PROCESS
• Place your pine nuts on a hot frying pan for few minutes until they golden brown on one side.
• Take it off the heat and set aside.
• Heat up oil on a frying pan and sauté the onion and garlic until translucent.
• Add the tomatoes with salt and stir well.
• Bring it to a boil, turn down the heat and let it simmer for about 20 to 30min until the mixture s completely mushy. You also want the extra liquid to evaporated, but not completely.
• Add the vinegar and cayenne pepper, stir well and take it off the heat.
• Let it cool down for a few minutes.
• Transfer to a blender a blend until smooth.
• Transfer to a bowl, add fresh basil and stir again.
• You may heat up the sauce before serving if you prefer hot.
