Hello my Dearest Foodies,

The weekend is at the door step, so here I am with an easy and delicious weekend treat for you. Obviously, super healthy as well, so if you have children, this is a perfect snack or even breakfast. You can skip the fancy part of it, but you know how kids are, they like sweet and pretty food. So give it a try. Although, skip the flowers, lol. That is just my touch for the photoshoot; magnolia from our garden ๐Ÿ’ฎ๐Ÿ’™๐Ÿ’ฎ


Chia Pudding with Blue Spirulina
Vegan โ€“ Gluten Free โ€“ Refined Sugar Free
Author: Lenaโ€™s Vegan Living

โ€ข Canned coconut milk 1 ยพ cup
โ€ข White Chia 1/3 cup
โ€ข Blue spirulina powder 3 tsp
โ€ข Maple syrup ยผ cup
โ€ข Pure vanilla extract 1 tsp
โ€ข Blueberries 1 cup to garnish
โ€ข Mint leaves (optional)
โ€ข Three measuring cups
โ€ข Two glasses


โ€ข Blend chia with milk and maple syrup in a bowl a stir well.
โ€ข Add 1 tsp spirulina and stir well again.
โ€ข Divide the mixture into three measuring cups.
โ€ข Add ยฝ of tsp in to first cup and stir well until you get desired shade of blue, slightly darker than the blue you started with.
โ€ข Add 1 tsp into the second cup and stir well. You may adjust the shades by adding little bit more but be very careful.
โ€ข Wen ready, divide the dark blue into two glasses. Shake the glass little bit, side to side, for the layer to flatten.
โ€ข Repeat again with the medium blue and the light blue.
โ€ข Cover with plastic wrap and place into refrigerator for couple hours or overnight.
โ€ข Add blueberries on top with mint if you like and serve.

Awwwwwwwwww, you are so sweet Barbara. Spirulina has very subtle taste and is hardly noticeable in the food. However, it is very healthy and as you can see it adds pretty color. And if I eat boring food; well, If depends whether you consider scramble tofu boring, because I eat that quite often, lol. Thank you so much for stopping by my Dear ๐Ÿ’™๐Ÿ˜๐Ÿ’™

Wow, it looks awesome. I dont have the right words to describe the beauty of them. I'm sure they are delicious. I'm falling in love with blue spirulina every time I see it. I did Miss Lena, in fact I don't think I've ever eaten anything that color of blue before. I think the only thing I've eaten that is blue is Blueberries.
