No-Bake Carrot Cake For My Steemit One Yr. Anniversary

It’s been a busy weekend for me.
After the strolling and plants hoarding at the garden center yesterday and earlier this morning preparing our garden soil and install the trellis for our vertical garden project, I made a carrot cheesecake this afternoon in celebration of my one year with Steemit! (well, it’s actually 1 week ago to be exact, so yah... I’m ending the month of Month March with a bang! I mean with, carrot cheesecake! 😅

This is the second time that I made a no bake carrot cheesecake. I’m a fan of no bake dessert recipes. Who wouldn’t?

So without further ado, below is the step by step.



Prep Time: 15minutes
Cooking Time 50 minutes
Cooling time 30
Serving: 6-8 persons

INGREDIENTES:
135 g self raising all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baling soda
1/2 teaspoon sea salt

1 cup or 125g carrots, grated
130g brown sugar

2 large eggs, beaten
125ml vegetable oil
1/3 cup walnuts, toasted and grind

For cream cheese frosting:
180 g cream cheese, softened (divide into 2)
4 tablespoons powdered sugar, sifted
1 teaspoon vanilla extract

METHOD:

  1. Place 1 Ltr. of water into the steamer and bring to boil.

  2. Wipe the cake pan with butter and set aside.

  3. In a mixing bowl, combine all the flour, cinnamon, baking powder, and salt.

  4. 2 In a large mixing bowl, mix eggs, vegetable oil and brown sugar. Whisk with either electric or hand mixer then add the carrots, and walnuts and beat all togther until totally combined.

  5. Pour just half of the flour mixture into the liquid mixture then mix and followed tthe remaining flour until the mixture is totally combined.

  6. Slowly pour the batter into the cake pan, cover with foil, and steam for about to 50 to 55 minutes or until texture is smooth.

  7. While the cake is steaming, soften the cream cheese until then add the sugar and vanilla. Whisk until combined and set aside in the fridge.

  8. When the carrot cake is done, let it rest for atleast 30 minutes before spreading the cream cheese.

  9. Garnish with more chopped toasted walnuts (optional). Slice and indulge!
