It's also a very common snack here in Thailand - called "met khanoon". I like. :) I have a friend here who has been drying the seeds and then grinding them into a flour for baking. Just yesterday she brought me a yummy chocolate cake (for my birthday) made with pure cacao and jackfruit seed flour. It was gooooood!
