This Russian Dessert Cheesecake pie is a quicker, easier version of full-blown cheesecake, but it’s certainly no less delicious and much healthier for you. If you love blueberries and you love cheesecake, I can’t think of a good reason for you to not make this blueberry cheesecake pie. Do it! I love cheesecake and wanted to try something healthier with all of the blueberry I had in my fridge and realised. You will cut calories and fat by half using lower fat cottage cheese. It tastes so good and you'll never know its made from cottage cheese.

Ingredients

2 eggs
250 gr OR 2 cups of low fat cottage cheese ( can use farm/ quark cheese)
100 - 150 gr OR 1/2 - 1 cup fresh blueberries
1 tbsp of cinnamon
3 tbsp of sweetener ( can use regular sugar)

Directions

Step 1 : Preheat your oven to 180 C or 350 F.
Step 2 : In a large bowl, mix your eggs, sugar, cinnamon, cottage cheese until smooth.
Step 3 : Add blueberries and mix well.
Step 4 : Add cooking spray to your baking dish so it doesn't stick and place the cottage cheese mixture inside.
Step 5 : Bake the blueberry cheesecake for 45-50 min until done.
Step 6 : Enjoy with tea or coffee.

    I love Cheesecake and Blueberrys but never tried them in combination , I defenetly will try your recepie.
    Since both things taste fantastic in seperate in combination it only can get better :D

          This cheesecake looks delicious. I like that it does not have a lot of ingredients and that you can turn it into a healthier alternative with using sweetener and low fat cottage cheese. Thank you for sharing the recipe.
