GRILLED CHICKEN AND PORK CHOPS

We always love to grill at home.. so if weather permits, we grill in the garden and of course charcoal is the best way to grill those marinated meat. And if it´s winter, we simply grill in the oven. When I went through my photo files, I found these images I took when my stepdaughter visited us a couple of years back. When we grill using the oven, we always have the same procedure which had been passed-on from my husband´s grandmother.

GRILLING AND MARINATING METHOD

The Chicken
Half an hour before the grilling , we spice the chicken with crushed garlic, soy sauce, salt and pepper all over. Then we place it in a tray half-filled with water with 2 tablespoons soy sauce and 1 teaspoon salt and dash of ground black pepper and 1 teaspoon of garlic powder.

The Pork Chops
Pork chops are grilled as a whole and I always have around 1.5 kgs for 4 portions. What I do is to rub the meat with crushed garlic, 2 tablespoons soy sauce , salt and pepper and let stand for half an hour... then, place the meat in a deeper container, add 2-3 bay leaf and pour a 1 liter of coke (or diet coke) until the meat is fully covered by the liquid. Marinate for at least two hours. When done, transfer into the deeper oven tray, add water to half-fill the oven tray. Similar to the chicken method, add salt and a dash of ground black pepper as well as soy sauce. The coke will make the pork chops become tender.

Place the tray on the lowest rack and grill in a preheated oven at 220°C/428°F. For both chicken and pork chop, always pour liquid onto the meat during the grilling so that the meat is always moist and does not get dry. Always turn the meat every half hour and continue pouring the liquid on it. If the liquid evaporates, add more water and spice as in above and continue pouring every 15-20 minutes.

For the chicken, grill it for about 1 1/2 hours while the pork chop may take to 1.75 hours. Ten minutes before the grill time ends, remove the meat from the tray and gather the liquid in a container... put back the meat on the tray, finish the grilling so that the meat becomes crispier before serving. The liquid you are taking out from the oven will become the sauce of the meat for serving. In a deep casserole, heat the liquid and add 1 tablespoon cornflour diluted in 3 tablespoons water.

Continue stirring to achieve a creamy consistency, if necessary adjust the spices according to your taste. Pour the thickened sauce in a bowl and serve this together with the meat. Before serving the pork chops, slice into portions as well as the chicken into half as in the photos shown. Serve hot with rice and green salads.

I want the Black Plums. It all looks so yummy.

We cook out on the grill too. We buy organic pork, chicken or organic grass fed beef. We just salt and pepper then the last minutes I add BBQ sauce on each side. Caramelizing one side then the other side. Then we put it in a container with a lid to keep it moist and hot until we are ready to eat.

If it is thick meat I make a foil pouch and Yami makes a rub for it. We just brown it on the grill then put it in the pouch to finish it off.

Best part of cooking on the grill is I use Mesquite wood! Have you ever used that to smoke your meat?

Oh I could imagine your whole family so busy with the grilling preparations, the kids are probably playing most of the time and wait til Yami says "lunch"! Lol, would love to see this scene. Unfortunately, we don't have the Mesquite wood available here, if we do it must be very costly. Thanks for dropping by...

LOL, yes why not ...am in the process of roasting a couple of rolled turkey. Come on down to enjoy lunch with us before they 're gone.. am serving them with noodle and green salad...hehehe

Marinate with coke? Oh dear, why would you cover your food with poison?!

I´ve been using coke all my life and I´m still alive and kicking!

Looks great. Does the meat taste sweet from the sugar or just blend into the meat flavor?

The sweet taste of the coke will just disappear . the purpose of marinating in coke is to soften the pork chop as a whole and make it tender when done. Thanks!
