Blue Marlin Kinilaw | Daily Food Photography

This is my third photo to be submitted to @howtostartablog's #dailyfoodphotography contest.

Kinilaw is a Filipino fish dish. I don't think it has an English translation but if I am to describe it in my own words it would be a kind of "fish salad." I saw the post of my Steemit friend, @long888, of a variation of kinilaw for his daily food photography entry and it got me drooling. This is one of my favorite fish dish ever. Different parts of the Philippines have different variations of the recipe. Here in the Visayas region particularly my province, in Leyte, our kinilaw is mixed with lightly cooked thick coconut milk.

In this picture, the fish that was used is blue marlin. The fish meat is cubed and marinated in vinegar and lemon for a few hours then drained. It is then mixed with sliced unripe tomatoes, onions, peppers and lastly, it will be poured with a lightly cooked thick coconut milk to give it that sweet creamy taste. The mixture of tastes from the sour vinegar, lemon, tomatoes and the sweetness and creaminess of the coconut milk just complement. The peppers give it added spice that makes it even more tasty. You will not realize you are actually eating fish because the vinegar and lemon combo has taken off the fish aroma from the meat of the fish plus the nice aroma coming from the different ingredients, it all smells heavenly like a veggie salad.

This dish is distinctly Filipino but it's pretty easy, it can be made by anyone all over the globe since the ingedients are pretty simple. You gotta try it and make your own variation wherever you are in the world. As for me, this is the tastiest fish dish for me. It's one of my favorites.
