Fish Recipes #1: Grilled prawns on peas cream

For the New Year's Eve, I tried this new recipe with prawns served above a peas cream and the result was simply delicious. So, I decided to share it with Steemit community.

Ingredients (for 4 people):

  • 800 gr. of peas
  • 1 big potato
  • 1 onion
  • 8 fresh or blast chilled prawns
  • 1l. of vegetable broth
  • Pepper
  • Salt
  • Extra virgin olive oil
  • Lemon juice
It is also possible to use 16 shrimps instead the prawns, however prawns are more suitable for this recipe. Read the differences between the two crustaceans here.



Directions:

  1. Put some oil and the chopped onion in a saucepan. Leave to brown gently, add the peas and the potato cut into small cubes. Then add a pinch of salt and white pepper and cover with the broth. Be careful not to add too much salt and pepper. In fact, the prawns taste is really delicate and would be covered by the peas cream, if it is too spicy.
  2. Lower the flame and cook for about 15 minutes. Then whisk until you obtain a homogeneous cream. If the peas peel is not well mixed with the rest of the soup, it is better to pass it inside a vegetable mill to remove them. In fact, they can be really chewy and make the cream unpleasant to eat.
  3. Clean the prawns cutting them on the back to remove the intestine. If you prefer you can shell them leaving only the tails.
  4. Put the prawns in a bowl and season them with a pinch of salt, lemon juice and some oil. Let them marinate for 10 minutes.
  5. Heat the grill and cook the prawns 1 minute on each side.
  6. Heat the peas cream and pour some cream in every dish. Add two prawns each on the top (or 4 shrimps).
