Cookwithus Week #14 - Anything Wrapped - Salmon wrap with baby spinach and halloumi
I love wraps and could probably eat one every day if I could .
This recipe is a cross between my home-made pizza and a plain wrap. Also inspired by @loveself and her amazing recipe last week.
Since we had salmon for dinner, I decided to make a wrap with the last piece of salmon left.
Ingredients:
1 piece of salmon grilled with lemon and spices (origanum, Himalayan salt, Cayenne pepper) and fresh lemon juice
baby spinach
halloumi cut into thin little chip shapes
green/red pepper
Fennel
Tomato slithers
All the above onto a wrap
The salmon before going into the oven
The leftover piece - crying to be made into a wrap
Pretty simple and delicious

I'm a big fan of wraps too. It is a great way to use up a little bit of leftovers. Your wrap is great with bright and refreshing flavors. It is interesting that your salmon is so light in color. Do you know where it is from? Our salmon in the States is deeper in color and can also be red. It is salmon season now here so we are eating a lot of wild salmon from Alaska. Thanks for your entry.
