Rainbow Chard Frittata

Chard and red pepper frittata, mushrooms is the perfect consistency between a crust-free quiche and an omelette. Instead of egg, it takes extra firm tofu, secret ingredient full of a thousand benefits for the body and giving it color and more benefits with the turmeric. The perfect dish to start in the morning, including lunch

We start with the recipe

INGREDIENTS
3 cloves garlic, chopped
2 tablespoons of extra virgin olive oil
1 block of extra firm tofu more or less than 1 pound - 454 grams.
1/2 teaspoon of jalapeno powder (optional)
1 tablespoon dijon mustard
1 shallot
1/4 teaspoon of turmeric
4 cups of chard or rainbow chard cut into strips or pieces
1/2 cup red pepper, chopped
1/2 teaspoon of salt from the Himalayas

Steps
Pre-heat the oven to 350ºF.
In a pan put the olive oil and garlic for about three minutes.
Only when the garlic is browned and softened, add the cut mushrooms shallot and chard and let them cook, the idea is to wither the leaves.
Besides, in a food processor mix the tofu (drain it well before putting it), the jalapeno powder, the dijon spoon, the turmeric and the salt. Add in the processor until everything is well integrated.
Empty the tofu mixture to the pan where the chard was cooked and add the red pepper in small pieces. If the chard released a lot of liquid when cooked, drain them so that the mixture is not too watered down. Integrate all the ingredients very well and with a spatula match the top of the frittata, put in the oven for 30 minutes or until it is firm to the touch.

I made the frittata in small muffin molds where I put some of the tofu mixture first and then the chard.

It is amazing how you can eat delicious and healthy changing only a few ingredients like the Tofu that I use as an egg and the turmetic that apart has so many benefits gives color to the dishes.

This does sounds delicious! It does look like a frittata - with egg. It's so good to know that tofu is a good substitute for the eggs for a dish like this. The use of turmeric, other than for its health benefits, tricks the eyes into thinking this dish has eggs. Great idea! The mushrooms and rainbow chard definitely gives good body to your dish.
