Happy Holidays Everyone!!!

My entry for this weeks Cook with Us contest and the first dish I would recommend for a great family Passover dish is:

Mamas Kosher Matzo Meatballs!

It's the Fourth week for the Cook with Us contest! A great contest hosted by the Cook with Us team : @chefsteve , @pandamama and @offoodandart with this theme being Italian/Easter/ a Passover dish.

For this weeks challenge I have been planning on making an Italian meal (which was the initial theme of the competition). But since there are two special holidays occurring this week - Easter and Passover, (as much as I LOOOOVE Italian food) I was so happy to hear that more options were added to this weeks theme such as a typical dish that you serve for Easter or Passover.

So, of course, Id like to take this opportunity and share the food we had on Friday for Passover and give a few recipe meal ideas for the 8 day holiday, since throughout these 8-days Jewish people do not eat any food that contains "leavening" ('chametz') (including pasta, cereal, wheat crackers and bread).

What and when is Pesach (Passover)?

Passover ('Pesach' in Hebrew) is a Jewish festival/holiday that commemorates the exodus of the Jews from slavery in Egypt. It is ultimately a celebration of freedom.

This year it commences on Friday, March 30th and ends on Saturday, April 7th (8 days in total).

The main event of the holiday is the SEDER, which means order. A festive meal is prepared and the story is told, food is eaten and songs are sung in a specific order. Children listen and dramatise the story, sing songs, say the blessings and make Pesach crafts in the weeks leading up to this holiday.

Why is it called Passover?


The jews were instructed to mark the doorposts of their homes with the blood of a slaughtered lamb and, upon seeing this, the spirit of the Lord knew to pass- over the first-born in these homes, hence the English name of the holiday (Source).

Why do we eat Matzo on Passover?

When Pharaoh agreed to free the Jewish people, it is said that they left in such a hurry that they could not wait for bread dough to rise (leaven). In commemoration, for the duration of Passover, no leavened bread is eaten, thus MATZO (flat unleavened bread) is eaten during Passover and it is a tradition of the holiday [(Source)](https://en.wikipedia.org/wiki/Passover) and is used in dishes as breadcrumbs (such as the traditional matzo-ball soup).

Delicious Matzo-Ball (kneidlach) Soup- An Ashkenazi Jewish soup-dumplings made from a mixture of matzah meal, eggs, water, and oil:


Hrayme- a traditional fish dish cooked in a thick spicy sauce based on oil, garlic, hot peppers and tomato paste:


Red Rice with Sweet Caramelized Onions:

And for this weeks challenge it's...

Mamas Kosher Matzo Meatballs!

(Original Recipe @Cooknbake:)


Ingredients:


For the Meatballs:
500 grams minced beef
2 medium onions, finely chopped
1/2 cup fine matzo crumbs
Salt and black pepper to taste

For the tomato sauce:
3 tbsp oil
2 large onions, chopped
3 tbsp tomato paste
2 large tomatoes, grated
Salt and black pepper to taste
3 cups water (or more)

Method:

1-In a large bowl mix all the meatball ingredients by hand and season the mixture with salt and pepper.
2-Roll meatballs to about the size of a ping pong ball
(tip: wet hands to prevent meat from sticking to them)


3-Heat oil in a stock pot over medium heat.
Add the chopped onions and cook, stirring occasionally, until golden brown, about 3 minutes.
4-Stir in the tomato paste, grated tomatoes and season with salt and pepper
(gradually add in a bit of water so that it wont stick to the pot/burn).


5-Let the sauce bubble, uncovered, then add in the meatballs one by one.
6-Add water gradually to cover the meatballs

7-Cover with lid and cook for 40 minutes, stirring gently occasionally



Serve hot with rice on the side and...

ENJOY! :)

Your matzo balls look delicious! The top (and last =D) photo makes me want to have some. It shows off the ingredients of the matzo balls and the thickened sauce with all the flavorful ingredients. Yumm!

If you want, instead of the matzo crumbs you can use breadcrumbs- its delicious!! We use the matzo crumbs only for the week of the holiday. Otherwise they taste great with breadcrumbs and the kids loooove it!!
