Hello my Steemit Friends! It’s week 18 of the Cook with Us Challenge and this week the theme is …

Ice Cream!


Perfect timing for this theme because it is really hot right now! I first want to take a moment to thank @pandamama, @chefsteve and @offoodandart for hosting this challenge. The community continues to grow and the great recipes just keep on coming!


When it’s hot, I love fresh lemons, in my tea, my lemonade, juices and smoothies! Did you know lemon juice can help lower body temperatures? They are also aromatic and wonderful when the juice is used for a foot and muscle relaxer. As a refreshing drink it may help you stay cool and calm. Great for your skin and hair! Full of vitamins, potassium, zinc and protein, lemons are really good for you. In fact studies show lemon juice can help eliminate the formation of kidney stones.


So, with that being said, we’re having Ice Cream made with Lemons!

Lemon Date Ice Cream Tuile Cups


You’ll Need

  • 2 -14 ounce can full fat Coconut Milk
  • 1 ½ cup pitted Medjool Dates
  • 1/2 cup hot water
  • Zest from 3 Lemons
  • Juice from 2 lemons
  • 1/2 cup fresh Raspberries
  • 1/4 cup Maple Syrup (Optional to taste)
    Note: Chill the Coconut Milk overnight before you are ready to make the ice cream

Prep


I placed the dates and hot water for 5 minutes. Then blend in food processor until completely smooth and creamy (A few date pieces are nice in the ice cream if you like!)

Drain the liquid from the canned Coconut, using only the fat. Whip the coconut cream until you achieve the whipped cream consistency. Stir in the date cream, lemon zest, lemon juice and maple syrup.

Place in the freezer for about an hour. I pulled it back out and swirled lightly mashed fresh raspberries into the ice cream.

Back in freezer for 3-4 hours before serving. Just a bit longer now!


I had a little time to make fresh Tuile cups to serve with our Ice Cream. Tuile is a baked wafer, French in origin often rolled or cup shaped. They’re wafer thin, crispy and slightly sweet. Today I made cups but you can also make cones as well.

And serve! We all love Ice Cream!

Lemons and dates are just a great combination together. Add in raspberries...home run! I just wish I can have some now. The tuile is perfect for a crunchy element. Love this @birdsinparadise. Good luck!

Love the raspberry swirls in your ice cream! And the dates base sounds delicious. I have not tried this before but it sounds really interesting. Would love to try it sometime soon.
