Green Curry with rice noodles

I am begginer pasionate about asian food. Today I am introducing to you one of my favorites asian meals. It's fast, spicy and (oh my God) how delicious..!

Ingredients:

  • 1 kg chicken brests
  • 2 teaspoons of sezam oil
  • 2 cans (400ml) of coconut milk
  • 3 teaspoons of curry paste (unless we have a mega-list it's less)
  • 3 teaspoons of fish sauce
  • 2 kaffir lime leaves (can be omitted and replaxed with lemon zest)
  • 2 teaspoons ground lemongrass
  • 1 teaspoons of cane sugar
  • 2 spring onions
  • 1 zucchini
  • 200g of sugar or traditional peas
  • 200g green string bean
  • fresh coriander
  • chive

NOTE:
Peas and string beans are usually used frozen, because the season is short. If we have fresh, the better, but it's good to pre-cook them, otherwise they will be hard.

STEPS:

  1. In a large saucepan, warm up the oil and fry the finely chopped green onions. Add curry paste and fry for 2-3 minutes. Add cleaned and cut into smaller pieces meat. Fry constantly stirring.

  2. Pour over coconut milk. Add sugar, fish sauce, lemon grass, kaffir leaves and cook for about 5 minutes.

  3. Add peas, beans and zucchini cut into not too small small strips. Cook until the vegetables are soft, but they do not overcook, for about 10 minutes.

  4. We serve sprinkled with coriander and chive in the company of rice, rice noodles or nothing as a soup.
