What is This Week's Breakfast Prep?

I like to make things ahead of time to save the most time when getting ready in the morning. Because let's face it, I want as much sleep as we can get in the morning, and I personally hate having to fight to cook something for the kiddo and husband (let's be honest, I also just won't!), and then grabbing something for myself usually on my first break. Very unhealthy, as that means that I don't eat until 10:00 am or later.

So I have started doing these really easy breakfast sandwiches, and they work out to be way cheaper than eating from the drive through.

Prairie's Breakfast Sandwiches

1 dozen eggs (2.79 on sale)
2 packages extra crispy english muffins (3.49 each)
Season salt
Cooking Spray
Deli Meat (I usually grab what is on sale, this week is Smoked Turkey Breast)
Cheese ( I used mozza and white cheddar this week)
Margarine
Optional: diced veggies

Tools needed:

Large Muffin Tins
Fork
Knife
Parchement paper squares
Paper towel SLIGHTLY (barely) damp

Preheat oven to 350

Spray large muffin tins with cooking spray. In small bowl, mix eggs one at a time, adding a dash of salt, then pour into a hole in the muffin tin. Repeat for rest of eggs until all holes are filled. If you do not have enough eggs to fill all holes, add 1 inch of water into the bottom of the muffin tin to avoid burning the tin.

**If you are adding in diced veggies, now would be the time. 1/4 cup most in each egg.

Bake for 25-30 mins

Prepare english muffins. Separate and spread out single layer on a cookie sheet, and bake them in the oven for 10 minutes, or until toasted.

Spread small amount of margarine on each side of the muffin. Add cheese, meat and egg, then close both halves together.

Then wrap.

Take one square of parchment, and place 1 sheet of barely damp paper towel inside. Place sandwich on top, and fold over. Bring bottom of the sheet up and over the sandwich, then top down. Tuck the ends in on themselves and fold underneath the sandwich to keep it together.

Freeze the sandwich up to 1 month.

To reheat, microwave for 1:30-2:00 minutes. Enjoy!
