Eggs with foie gras and potatoes

Ingredients for
Ingredients for 6 people
3 large potatoes
200 g of fresh duck liver or 4 escalopes
6 eggs
3 buds
Salt
olive oil
Preparation
Peel the potatoes and cut them into straw. Wash them in cold water. Leave them for hours in plenty of water so that they lose some starch. Dry them Fry over medium heat until golden brown. Drain the oil.
Cut the liver into schnitzels, season them and brown them over a high heat without oil. Fry the eggs.
Serve it with the straw potatoes in the bottom, then the foie gras and the eggs. Break it all, add the beaten yolks and season it. Serve it very hot.
