Coffee's of the world -Thailand Doi Chaang Estate Arabica Coffee with me @c0ff33a ☕️
It's been 27 days since my last coffee of the world post - seriously am I that lazy? This last month though on Steemit - is it just me or has this platform kicked up a gear or two - the content has just grown and grown and I love the diversity and incredible quality you are all all sharing. So for tonights post I would like to share a really special coffee to me, Thailand grows some amazing coffee but it is also limited -once the crop of the year is gone it takes another year for the next to grow and be cultivated.
You can not beat a bit of art on a coffee sack, when the latest shipment of green coffee arrived I was very keen to get at this sack. This particular pallet had a few boxes on - these boxed coffees have vacuum sealed bags of 12kg each - the coffees are from Speciality Estates , they are extremely high quality so are quite expensive.
But this post is going to be all about that lovely Thailand Doi Chaang estate coffee, this Arabica is very good with some amazing flavours - with orange like citrus flavours, a hint of cut fir and even dark chocolate. Let's look at the green beans first
Look good don't they, but before we can taste these we have to roast them - so into my coffee roaster they must go!
Now we have to wait, 12 minutes to roast this coffee from green to a lovely light brown colour.
Once we get close to the coffee being ready - we can see the change in colour.
And then we have the magical moment when the roasted coffee is released into the cooling tray, a fan underneath the roaster sucks air through the roasted coffee and blows it out of the exhaust flue.
I'm really excited to try this new batch of Thailand Doi Chaang coffee, it is well over a year since I last had some - the crop is very limited from them and once it sells out no more until next season. I hope they still have some more left when I next order from this broker, I'm starting to think I should have bought two sacks!
Just look at those lovely roasted beans, so tasty looking you could almost eat them. In fact some people do, I have crunched a few now and again - you don't want many of these though!
Let's get onto brewing the coffee, this week I'm changing brewing method - we are going to use the Hario V60 dripper brewer with an unbleached filter paper. Gold standard for brewing drip filter is 75g per 1.8litre, I'm going to brew just under 1 litre so go for 30g weight of ground coffee.
Let's add some water heated to 90 degrees Celsius and watch it drip
With the drip brewing method - we keep topping up the water as it drains through into the jug below until we have sufficient liquid coffee in the jug.
Can you smell it? Well trust me it's heavenly, such an amazing complex aroma - I can not wait to dig in! But first - we must learn more about this amazing coffee from Thailand - so let's check out the slides from the coffee Broker I purchased this coffee from.
So now it's time to finally taste this wonderful brew, that I have waited so long to taste again. The dark chocolate and citrus flavours are calling me - and this time after a week of freezing temperatures, snow and ice I'm not drinking from a cup.
Straight from the jug it brewed in, delicious such a rich tasting flavour. Pretty much this is all I have been drinking since it arrived with me, fantastic coffee and when you hit that roast just right - developing flavours through First Crack and then dropping to cool before it get's too dark - just superb.

It is amazing how green coffee beans turned to delicious brown, and boy, I can only imagine how it smells so good all around!

I really enjoyed reading through this post. Not only for the coffee related content which I’m always interested in, but also the fantastic write up and Information you included as a part of it all. Coffee storytelling at its finest.
I actually signed up to a subscription coffee company a couple of years ago and was able to taste so many new blends and flavours of coffee that just don’t exist in the store bought stuff, it’s amazing what is out there!
Thank you very much, every coffee has it's own little story and I try and pull up as much information as I can from the Brokers I get it from. Coffee subscriptions are a good way to try many different coffee's, and often done by small Artisan roasters so the quality is excellent.
Yum, I can smell it clear over here on the other side of the world. Do you use 90 degree water for all your pour throughs? You make me want a real roaster! Do they have mini models? Yes, I totally enjoy your posts however rare they become. Thank you for all your support
I try to stick around the 90 degree mark, if you want to get really technical you can adjust the temperature either side and definitely find a perfect sweet spot temperature for every different coffee origin. But really I don't have that much time free to play like that. There are quite a few small domestic coffee roasters on the market - one simple fun unit is the Gene Cafe that uses hot air and and an off axis drum.
That is fantastic that you are importing this coffee from Thailand it is the most popular coffee here for Thai people i have myself enjoyed drinking the Doi Chaang coffee. I was introduced to this coffee by a Thai friend of my in south of Thailand and i remember having to wait in a line up for this coffee just wish they had more shops with this coffee it's truly a amazing tasting coffee. I must hunt down the Doi Chaang coffee shop in Bangkok now that you have bought it up :)
It's quite hard to get hold of in the UK, the Brokers only bring in a small amount and once that sells out we have to wait another year for the next cup. I'm pleased you have been able to try the coffee as well and enjoyed it, the quality is excellent and it has some amazing flavours to enjoy.
Understand...yep certainly a great coffee you always got to stand in line at coffee shops to get this awesome cupper...but worth it..😊

You know, you might just have it there lol. I'm well overdue a hair cut, so I'll not be the dude for much longer.
The prep work that goes into making a great cup of coffee is totally worth it. I love tasting beans from all over the world -- but I'll admit that I don't quite have the palate to discern subtle flavor differences. Where would you say some of the best coffee you've tried is? It might be a bit of a vacation bias, but in my opinion, when I was in Australia last fall (north hemisphere fall), we had some of the best coffee I've had in quite some time. Some Woolloomooloo blend espresso (in a long-black) from Toby's Estate.
Thank you very much, I wouldn't like to say I have a best coffee because they are all unique and have their own special flavours. Australia grows a little coffee themselves, the Skybury estate coffee is excellent quality and really a great cup.
