Kuah Beulangong adalah kuliner yang khas di Aceh, dari beberapa sumber yang saya baca dan saya tanya, pada dasarnya kuah beulangong ini berasal dari masyarakat Aceh Besar, namun dewasa ini kita bisa mendapakan kuliner kuah belangong ini hampir di semua kabupaten yang ada di Aceh.

Kenapa Kuah Beulongong dikatakan kuliner nusantara, karena kuliner ini menjadi khas di Aceh, banyak pendatang baru dan juga wisatawan menyukai masakan ini. Ini moment saat saya belajar masak kuah beulangong dengan warga masyarakat Desa Alue Barueh, Kecamatan Seunuddon, Kabupaten Aceh Utara. Desa dimana saya dilahirkan.

Bagi yang sudah sering memasak Kuah Beulangong ini sangatlah mudah tetapi sangat susah bagi pemula seperti saya, cara memasaknya sangalah rumit, dari proses peracikan bumbu hingga proses memasaknya harus betul-betul diperhatikan.
Yang menjadi daya tarik bagi saya, dari proses penyembelihan hewan,peracikan bumbu-bumbu dan penambahan rempah-rempah yang lain itu dilakukan secara bersama (ramai). Kuliner ini juga bisa jadi pemersatu masyarakat gampong kerena dilakukan secara bersama seperti gotong royong.

Sekarang saya kasih tau bahan-bahan dan bumbu dari Kuah Beulangong.
Bahannya terdiri dari :
Daging Sapi/daging kambing, kalau digambar saya itu daging kambing, buah nangka/pisang muda, Serai, daun salam, kayu manis, jeruk nipis dan santan kelapa.
Adapun bumbunya terdiri dari :
Cabai kering , Cabai merah, Bawang merah, Bawang putih, Lada, Jahe, Kunyit, Jintan, Ketumbar, Cengkeh, Kapulaga, Kemiri dan Garam.
Cara Memasaknya :
Cuci bersih daging sapi/kambing yang sudah dipotong, masukkan jerus nipis secukupnya.
Haluskan semua bumbu.
Campurkan bumbu dengan daging lalu aduk sampai merata dan diamkan beberapa menit,supaya bumbu meresap kedaging.
Tumis bawang di Beulangong/belanga, masukkan daging,daun salam, serai dan tuangkan santan. Tunggu sampai meresap dan kemudian tuangkan nangka/pisang yang sudah dipotong.
Tunggu sampai daging dan buah pisang/nangka empuk, lalu angkat dan kuah beulangong siap disajikan.
Inilah Kuliner khas Aceh sekaligus proses memasaknya, semua postingan saya bermanfaat bagi teman-teman semua.

Culinary Archipelago #Kuah Beulangong Khas Aceh

Kuah beulangong is a typical culinary in aceh, from several sources that I read and I asked, basically beulangong the gravy comes from the people of Aceh Besar, but nowadays we can get this gravy belangong culinary almost in all districts of the There are in aceh.
Why culinary said nusantara Beulongong Gravy, as it became the typical culinary in aceh and many newcomers, tourists also liked this dish. For those who've often cooking Gravy Beulangong this is easy but it is very difficult for a beginner like me, the way to Cook is very complicated, from the process of compounding seasoning to process cooked it should be exactly of note.
That became an attraction for me, from the process of slaughtering animals, compounding the spices and the addition of other herbs it done together (many). It also could be a culinary unifying the villagers because they performed together as mutual.
I now you know the ingredients and seasonings from Kuah Beulangong.
The material consists of:
Beef/mutton, if drawn me that goat, young jackfruit Fruit/bananas, Lemongrass, Bay leaves, cinnamon, lime juice and coconut milk.

As for his marinade is composed of:
Dried chili pepper, red chili, onion, garlic, pepper, ginger, turmeric, cumin, coriander, cloves, cardamom, Nutmeg and salt.

How To Cook It:

  1. Wash clean beef/sheep already cut, enter jerus lime to taste.
  2. Blend all seasonings.
  3. Combine spices with meat and then stir until evenly and let sit a few minutes, so that the marinade seep into the meat.
  4. Saute onion in Beulangong/pots, put meat, bay leaf, Lemongrass and pour coconut milk. Wait for it to sink in and then pour the banana/jackfruit was cut.
  5. Wait until the meat and fruit banana/jackfruit is tender, and then lift and gravy beulangong ready to be served.
