Garlic Mayo Chicken Salad Keto Recipe.
OMG, I am not a big fan of salad but this was amazing.

Today for my dinner I decided to go old school for food and go for a good old salad, I haven't eaten a salad in a while as I am not keen on it, but today's was really nice.
I started with making the garlic Mayo first, this was two cloves finely chopped and added to store bought full fat Mayo, give it a good mix to get the garlic flavour incorporated.
The chicken was salted and placed in the oven for 1 hour, it was cooked after 40 minutes but I like my skin to be really crisp so the extra cooking time gives it what it needs.
While the chicken was finishing cooking I chopped up my lettuce tomato red pepper and white onion and made my salad, the crazy thing about this, you can't have too much as you need to eat 70% fat.
I diced up my chicken leaving the skin in the mix and removing the bones, I always find it easier to remove the bones after cooking than before, plus I always think that the bone gives the chicken extra flavour too.
Adding the chicken to the plate with the salad and then dolloping the Mayo on top, it was really nice and with it been on the keto was well worth it too.

I would have this again and with the weather been hot it was well worth eating out side in the sun too.
