Meat Advice!

New here, and not sure if this is how I am supposed to use steem, but I bought some delicious looking grass beef ribs on crowdcow.com and am either going to smoke them using this recipe:

Or I am going to braise them.

Leaning towards smoking, but wondering if anyone has some good advice on how to do so on a gas grill.
