I am a cheese lover. I love it most of all dairy products. Could I just pass by this colorful cheese? No way.

This particular cheese is made by the company which name can be translated from ukrainian as Cheese kingdom. It was born as a result of experimenting with the classical Gauda.

You'd suppose that these colors are just food coloring. But no. Ages ago, italians came up with how to use spices to "color" cheeses. They use Pesto sauce.

Pesto is not only green, made of classic greenish sauce made from olive oil, basil, pine nuts and cheese. Red Pesto is more tender because of added sun-dried tomatoes and oregano.

Cheese with blue pesto and lavender flowers came from the Netherlands, where it is cooked almost the same way as the classical Gauda. But, inspired by a series of cheese with the addition of pesto, which the Dutch cheese makers got amazing, they add lavender during the boiling in the vat. Blue cheese with a soft and rich creamy flavor certainly looks spectacular on the plate thanks to a beautiful saturated color (tinted with indigo carmine - extracted from plants of the genus indigofera).
