Sweet and Sour Pork
Ingredients:
- 1 lb. pork tenderloin, cut into 1-inch cubes
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup diced pineapple
- 1/4 cup chicken broth
- 2 tablespoons white vinegar
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder
Instructions:
- Place pork cubes in a large bowl and coat with cornstarch.
- Heat oil in a large skillet over medium-high heat.
- Add pork cubes to the skillet and cook until browned on all sides, about 5 minutes.
- Add onion, bell pepper, and pineapple to the skillet and cook for an additional 3 minutes.
- In a small bowl, whisk together chicken broth, vinegar, honey, soy sauce, and garlic powder.
- Pour sauce mixture over pork and vegetables and stir to combine.
- Cook until sauce has thickened and pork is cooked through, about 10 minutes.
- Serve warm.
