Meatballs: How To Make Them One Perfect Way.... Plus The Blue Cheese Sauce

Hello Dear Steemians!

Today, I am sharing a good recipe that you might like to try at home. It took me time to write the recipe of this dish here because all procedures are on my mind. I sure hope that it will give you an idea of how to make perfect meatballs using bread and egg to bind the meat. I make this dish often at home, in fact it is one of the favorite dishes I love to cook.

We have a discount supermarket that sells very lean ground pork and beef combined (50/50) and the quality of the meat is very good. I always store ground meat in the freezer because it is so versatile to use, you never know when to have surprise guests. When I cook this dish, sometimes I add red bell pepper and zucchini just for the color, it is really optional and does not affect the taste of the blue cheese sauce.

SPAGHETTI WITH MEATBALLS AND BLUE CHEESE SAUCE

HOW TO MAKE THE MEATBALLS

Ingredients (Serves 4)

500 grams 50/50 ground pork and beef
1 onion
4 slices sandwich bread, cubed
1 egg
Soy sauce
Worcerstershire sauce ( Maggi liquid will do)
Garlic powder
Salt and pepper

Preparations:

1…Cut the onions in quarters, place in a food processor, pulse the button for about 30 seconds until onion is minced. If no machine is available, use knife to mince the onion, set aside.

2… Cut the toast bread into cubes and place them in a container, add the egg, soy sauce, garlic powder, worcestershire sauce , salt and pepper. Combine and press all ingredients until the bread turns into a fine paste like consistency. Of course, you may use the food processor to make it quicker.

3…Add the minced meat , and onion and with your hands combine the ingredients properly. Scoop one tablespoon of the mixture and form the meatballs one by one between your palms. An option ist to place the meatballs in a platter and cook in microwave oven for 7 minutes to make the balls more firm before frying. In a wok or pan with hot oil, deep fry the meatballs until they are brown on all sides. Take out and place in a plate lined with paper towel. Keep warn and set aside for later use.

HOW TO MAKE THE BLUE CHEESE SAUCE

Ingredients:

1 Onion, minced
2 cloves garlic , crushed
250 grams bluecheese or Gorgonzola cheese, cut into cubes
2 1/2 cups skimmed milk
125 grams Creme Fraiche or Philadelphia Cream Cheese
bell pepper, zucchini cut into small pieces ( optional, to give a bit of color to the dish)
Cooking oil
Salt and pepper
Basil leaves to garnish
Grana Padano ground cheese to garnish (optional)

Preparations:

1...In a hot pan with 1 tablespoon cooking oil, fry the garlic til brown in color, add the onions, fry until glossy in consistency. Add the skimmed milk and the blue cheese and reduce the heat to medium. Keep stirring til the cheese is dissolved. Add the creme fraiche (or Philadelphia Cream Cheese) and stir constantly. Season with salt and pepper according to your taste.. Normally, the blue cheese has already salt in it...so you may want to check out and taste it before adding salt. Transfer the sauce in a serving dish.

NOODLES TO USE
Use any other pasta variety you prefer. Cook the noodles according to the package instructions...here, I cooked the spaghetti in boiling water with salt for around 5 minutes. Depends on how thick the noodles are, usually thinner ones are done in 3 minutes. Drain the water and keep the noodles warm for serving later.

SERVINGS

There are two ways of serving this dish...

1... Take out and separate a portion of the sauce in a cup.... then add the rest of blue cheese sauce to the spaghetti in the casserole, mix until the noodles are well coated with the blue cheese sauce. Serve on a plate and add the meatballs as toppings, pour a teaspoon sauce on the meatballs and garnish with basil leaves.

2... another method is to put the serving bowls separately, let each person take his own portion of the spaghetti, the meatballs and the sauce. You can also add Grana Padano (italian hard cheese) ground cheese to make it more spicy..
